Even though I’m following your video, My document is only showing page numbers on the even side...

When I do section break it automaticaly creates a new, empty page, not just one empty line like yours do

Do you have any additional return marks after the section break? If you click on the formatting marks icon in the home tab it will show you where all your return key marks are. Delete them after the section break and you should be good.
