Here you can find how I take care of pendulous _Dendrobium_ from small keiki to blooms. I still water them no matter small or adult plants. Just make adjustments according to the roots activities and the dryness of media.
Im my home town we are not familiar with moss..what else can I use..cause I love this hono hono and just got a tiny one from my daughter..we only have charcoal and wood chips bark..
Potting media will never be an issue for most epiphytic orchids. The differences are how the grower to fulfill the needs to the orchids. Barks or barks mixed with charcoals are fine, however, these media with good drainage are airy. In another words, they don’t retain water and fertilizers as much as sphagnum moss does. Pendulous dendrobiums need plenty of water during growing season. That means we have to give them water and fertilizers more frequently if potting them in coarse media. Another concern is how to secure the orchids before they anchor themselves. They grow pretty fast compared to other orchids, usually the pseudobulbs are too heavy before they firmly griping the pots.
Why are you packing the moss so much? Roots going to rot due to not enough air.
Have you watched my videos about the orchid show or nurseries? Most orchids there are growing in tight-packed sphagnum moss. My den, nosmum var. alba is also growing well in tight-packed sphagnum moss, I also made some videos about it. I didn’t see roots rotting due to not enough air. However, over-watering can cause roots rotting as well as other potting media do.
I'll made another video about this anosmum '4n'. It's interesting more than your expectation.

No I don't have 2N _Den. anosmum_. 2N is seldom seem on market, due to 4n is commonly seen on market.
Too much packing... The plant will die.
