Hey Mia, I've been cooking gluten-free for 5 years and I've found some tips that really help. My top 2 are:
1. In a lot of baked items I increase the amount of baking powder I put in
2. I always add more liquid than any recipe calls for
We often will make waffle mix, let it sit so it thickens, and then add more liquid
I've found that coconut flour really sucks up the moisture!
Yep I agree I was gf free for almost 10 years and than recently I can eat gluten get that. We always buy the ready mix pancake waffle mix knowing that it will turn out correctly.

When I was in highschool I was taught a cookie recipe that was quick and easy. I then tried to recreate it months later cause was going to have them for my birthday party. I did it so so wrong that the ingredients I used turned it into like glue instead all because I had clearly forgotten what was actually needed 😂

Welcome to the club 🤣 just wanted to say it can be hard and overwhelming at first but it does get easier. You got this!
If you're going to bake I highly recommend buying a cup-for-cup gluten free flour blend, so much quicker and easier than mixing a bunch of different flours together yourself. And it does get easier.

I got engaged before covid and I was in the midst of planning when covid hit. We scrapped all our plans and got married at my in laws farm with just close family and friends. I honestly am happy we went that route instead. It made for a very fun time. Plus the farm animals in the pictures were cute
Not me confused when Mia made just one waffle to share with her family. When I make those I make a whole pile of them. No one would be fine with 1/4 of a waffle 😂😂
I find GF, or low carb stuff more filling, so I eat less
Those waffles looked crazy dense so you probably wouldn't be able to eat as much as you usually do.
I always add xantham gum to my gluten free bakes.. just like a teaspoon and it makes the texture so much better. Also more liquid than normal recipes would call for, especially when using coconut flour. I also whip any eggs for a lot longer. Stress baking is my jam. I love it!!

Commenting just to add one small informational caveat: xantham gum has some harmful effects and it's in a lot of processed foods already. So whoever is interested, consider using in moderation and/or do a little research so you feel informed about what you're using. I use it rarely but try to use some more natural alternatives most of the time.

The suggestion I have found to make my gluten free baking more fluffy is to add the baking powder and soda to the flour and then mix it very well before adding wet ingredients. It doesn't rise as much as when I forget this. Thank you for sharing these delicious looking recipes! Written with love and well wishes xo
Ya baking powder etc should always be mixed into the flour first to distribute it, before any wet ingredients

Baking tip! You've got the wet and dry bowls, great! Just remember you also have dry measuring cups and liquid measuring cups!
And baking is a science - measuring is important!
But the liquid and dry measuring cups equal the same amount so if you dont have both, yolo haha
I tend to wash between wet and dry ingredients abd reuse the sane ones.

You are adorable! Thank you for showing some GF recipes! In my experience, I’ve noticed that coconut flour soaks up a lot of liquid so you may just need more milk/water when you use it so your batter isn’t so thick :)
Coconut flour absorbs extra moisture! That's probably why your baked goods are turning out thicker than expected :) You can add a bit extra liquid to compensate for the absorption, but if you like the texture, then its all good!

I was so blessed to have my mom as my wedding planner. I was working full time and struggling with a lot, there was no way for me to devote as much time as it takes to plan a wedding. My mom made a ton of decorations (and my bouquet), took care of the venue, the bridal shower, basically everything. She was amazing, and I would have gone crazy without her. My wedding was very small and intimate, just immediate family. I did not want a big wedding, and was feeling stressed with just the few decisions that I had to make. I cannot imaging doing more than I did, and feel so fortunate that my mom was able to take care of almost everything. I feel like it was extra special too, having her so involved. Every part of my wedding had a purpose and meaning to us, there were so many little details that were just so perfect. A lot of items made by hand or thoughtfully arranged by my mom. I loved everything about it, and hope that your wedding is just as special!

Coconut flour is usually substituted with regular flour, 1/4 cup to 1 cup. So adding coconut flour is probably what makes the banana bread mixture so thick. Love your videos!

Take your time planning, remember to designate things to others who wish to help out with things that don’t NEED to be done by you or that someone else can do better. Don’t settle. Ever. Don’t let anyone change your mind on something you want for your wedding. Don’t let anyone pressure you into inviting anyone you don’t want to or doing anything for your wedding that you want. Put your foot down.

My mom makes banana bread all the time and she finds that you should un-peel the bananas and put them in a zip lock bag before freezing them. Hope this helps🙃😊
