Hannibal In doubles Z conversion is very risky. You could get doubled into, roared, hazed, etc. Z hyper beam has the potential to instantly remove one of your opponent's mons, which could throw off their entire battle plan. (e.g. deny trick room, bypass pinch berry recovery, remove a counter to something you have in the back). Normalium Z works for both moves so your opponent can't be sure which one you're going to use even in a BO3 setting.

Try out Z-Conversion with Thunderbolt as it's first move and then Ice Beam & Psychic as its other options. Really freaking strong, I used it to get through the battle tree on Super Singles.
in gen 7 the most common strat for porygon Z is to use Z conversion to get a +1 on all stats and turn his typing into his first move. This will get you a stab move of your choice (often shadow ball or thunderbolt) and make you a speedy and bulky powerhouse thanks to adaptability.
I would argue going for Z hyper beam is even more common at high elo, most teams at that level have a counter to z conversion (trick room, roar, etc.), so hitting your enemy for massive damage instead is often more useful.

Conversion would be a good way to get around the fighting type weakness and maybe with analytic give it better stab. However that takes time and might not work outside of multi battles
