2:06 "As long as it's not olive oil" hahaha high caliber shots fired. So, so many western chef videos keep using olive oil, but its low smoke point makes it really unsuitable for the high heat best suited for these kinds of dishes.

    • @diftama949

Olive oil also give your fried rice a unnecessary flavour that not match with flavor of fried rice.

Refined olive oil has a smoke point of up to 243C/470F, which is comparable to canola 230C/446F and refined peanut oil 232C/450F. It's just that few chefs and cooks bother making the distinction.

Notice how we have the same thought about nasi goreng is world best fried rice, and lapchiong in Chinese fried rice? Lol!
    "Fried rice in
Indonesia: egg, sweet soy sauce, garlic, shallot, tomato ketchup. Topping with any protein or satay. Eat with krupuk (shrimp cracker) and acar (cucumber pickle sweet and sour). Indonesian fried rice is the best in the world!
China: egg, soy sauce, spring onion. Can add any topping, my fave is lapchiong (Chinese dry sausage).
    Thailand: add pineapple and shrimp.
Korea: add rice to any left over sauce of other meals on the pan. It can be soggy, but taste good."
