Try Chana - pattani (Garbanzo beans), Rajma (Kidney Beans), Lobia (Black eye peas) etc. You can use Soya Chunk (Nutrela Soya) . But when you say vegan, it should not include anything animal including Ghee, butter, cream, milk and curd.
