Assign Profile vs. Convert Profile: Changing Color Space

So, briefly speaking: assign changes Lab but not RGB values, convert to-opposite, Lab is intact, RGB changes.

I sometimes assign Adobe RGB to my SRGB images because I like how it looks in some cases, I use it like a fast way of increasing the vibrance and the results are also very consistent, been trying to do it for videos inside of PS but it looks like it doesn't like it, no idea why

I dont have the 'Convert to Profile..." option. How and why?

Let’s get some more information. What version of Photoshop do you have? And what options do you see where you are expecting Convert to Profile?

@@TheVisualCenter mine 2020 version 24.3.
I only see Color Settings and Assign Profile.
