UBE CUSTARD CAKE I Perfect Christmas Dessert

- Ube custard cake is a combination of soft and fluffy ube chiffon cake and creamy leche flan ( egg pudding ). A perfect dessert for holidays and special occasions. I hope you enjoy this recipe!
INGREDIENTS:
size of the pan: 8 x 3 inches round baking pan
serving size: good for 8 servings
FOR THE CARAMEL:
3/4 cup white sugar
FOR THE LECHE FLAN:
6egg yolks ( from large egg )
1 cup condensed milk
3/4 cup evaporated milk
1 teaspoon vanilla
FOR THE CAKE:
4 large egg yolks
1/3 cup sugar
1/4 cup milk
1/4 cup oil
1 teaspoon ube extract
1/4 teaspoon purple food colouring ( optional )
1 cup cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
FOR THE MERINGUE:
4 large egg whites
1/2 teaspoon cream of tartar
1/3 cup sugar
*Bake in a preheated oven at 180C for 1 hour and 25 minutes or its better to check the cake by inserting toothpick in the middle. If comes out clean, it's done.
*IMPORTANT NOTE: If you have some issue on baking this cake mainam po na halfway of baking you need to put alluminum foil on top gaya po ng nasa video para maiwasan na mag brown masyado yung ibabaw ng cake or sometimes oven temperature can also vary model to model. Kaya mas mainam parin po na icheck natin yung cake from time to time.
*In this recipe we need to use cake flour but you can make your own cake flour substitute. For every 1 cup of cake flour, use 1 cup minus 2 tablespoons of all-purpose flour and add 2 tablespoons of cornstarch.

I LOVE Ube and purple is my favorite color. The color combination is beautiful and of course yummy. I saw a woman making the same thing but she called it Impossible cake. She poured her cake in first and then poured the custard over it. It came out the same like yours. It’s all about science. 💞

Mommy Chocco, I make the way I cook my caramel but a little bit more. The leche flan I inchlude dayap. It makes it unique and smells delicious. Don't forget the zest of lime.
I will try it next time, leche flan with subtle hints of lime. I remember my mom she made lechen flan with katas ng dayap before. Thank you Beth for the info.

How long do I bake the flan and cake if I make them separately? I have a pan that is a little too short

Tried this recipe yesterday, but omitted the ube extract and coloring since i'm not a fan of ube. Super sarap! Finally found a perfect recipe for a chiffon cake ❤ at dahil jan, napa subscribe ako haha! My only mistake is that di ko dinaan sa proper measuring cup ung evap milk measurement kaya siguro di nabuo ung custard resulting sa pagcollapse when i flip it. Or maybe sa pan din na ginamit ko since i used the banana bread pan. Ah basta, 😁 i'll perfect it next time...super sarap kasi di nakakaumay👍 must try! Ps. Sa sobrang sarap nya, ginising ko early in the morning mag ama ko para tikman hahahah! Ask ko lng po ano need ichange sa ingredients measurement if i put cocoa powder para maging chocolate flavor ang cake?
Thanks Farrah for the feedback! Sobrang naaliw ako sa napaka habang comment mo. Dapat exact yung measurement ng evaporated milk if not hindi mabubuo yung custard or leche flan. Next time mas mainam kung round or rectangular baking pan ang gagamitin mo. Just add 1/4 cup cocoa powder if your planning to make choco custard cake.

I love this recipe! The cake came out delicious! But I have a couple questions. My cake caved-in in the middle. Also, my caramel layer did not completely come out of the pan when I flipped it over. Do you know how to fix these issues?

I tried your recipe as is and the flavor is perfect! Although it came out a little bit lopsided, overall it was very tasty. I shared it with the fam and one gave it a 3 thumbs up😂.
What would you recommend to avoid a lopsided cakes?

Oh no! Sorry to hear that. An oven that is too hot can also cause uneven baking. Use an oven thermometer to check your oven accuracy. Then adjust accordingly. You can't double the recipe using 10x3 pan, the cake batter may overflow from the tin while baking.

No, you don't need to grease the pan when making sponge, chiffon or custard cake. I hope you like it.

Hi! I’m going to try this recipe but was wondering if you have to grease the pan before putting the ingredients in it?
You don't need to grease the pan, sponge cakes and chiffon cakes as well as other cakes and batters that are dependent on egg whites to rise do not need to be greased.
I made this, its so good the only problem I encountered was , i had a hard time taking it out from the pan so the edges didn’t look perfect and smooth . Any tips? Thanks for this yummy recipe!
You're welcome, Rose! See if this help, let it cool completely, cover the pan with plastic wrap and place in the fridge for 5 hours or overnight before unmolding.
Great baking techniques. We make our caramel the same way and floppy cake. Can you please post a recipe for kalamay hirin and sapin-sapin from Bulacan. As I remember from my childhood in Bulacan, our sapin-sapin is plain white. No food coloring and thinly layered (9 layers). Thank you for sharing.

I work on a ship n tuwa mga pinoy nag aagawan 1st time daw ksi sila nk kita ng ube custard cake sa barko. But the European ask why color violet? And why there's a custard on top. They eat it but I think they don't like, cous they didn't ask for more hahaha
