Teriyaki Chicken Lettuce Wraps
Servings: 2-3
INGREDIENTS
1 cup leftover chicken, shredded
½ cup teriyaki sauce
Romaine lettuce
Scallions, to serve
PREPARATION
1. In a bow,l mix the chicken and teriyaki sauce.
2. Place the mixture over the romaine leaves.
3. Top with scallions.
4. Enjoy!

Cheesy Chicken Enchiladas
Servings: 2-3
INGREDIENTS
1 cup leftover chicken, shredded
1 cup enchilada sauce, divided
1 cup cheese blend, divided
5 tortillas
Sour cream, to serve
Cilantro, to serve
PREPARATION
1. Preheat oven to 350°F (180°C).
2. Mix the chicken, ½ cup of the enchilada sauce, and ½ cup of the cheese blend in a bowl.
3. Wrap the tortillas in a paper towel and microwave for 30 seconds.
4. Place the chicken on the tortilla and roll tightly.
5. Place the enchiladas in a baking pan and top with remaining sauce and cheese.
6. Bake for 15 minutes, or until cheese has melted.
7. Top with sour cream and cilantro.
8. Enjoy!

Buffalo Chicken Dip
Servings: 4
INGREDIENTS
1 cup leftover chicken, shredded
8 ounces cream cheese, softened
½ cup ranch dressing
½ cup buffalo sauce
Cheddar cheese
Scallions, to serve
Chips, to serve
PREPARATION
1. Preheat the oven to 350°F (180°C).
2. In a bowl, mix the chicken, cream cheese, and buffalo sauce.
3. Pour mixture into a cast iron skillet and smooth with a spoon.
4. Cover with cheddar cheese and bake for 20 minutes, or until cheese is melted and bubbly.
5. Top with scallions.
6. Enjoy with your favorite chips!

Chicken Bacon Ranch Baked Potatoes
Servings: 2
INGREDIENTS
2 russet potatoes
1 cup leftover chicken, shredded
½ ranch dressing
¼ cup bacon, cooked and chopped
¼ cup cheddar cheese
Sour cream, to serve
Scallions, to serve
PREPARATION
1. Preheat oven to 400°F (200°C).
2. With a fork, poke the potatoes.
3. Place the potatoes on a plate and microwave for five minutes on each side.
4. In a bowl mix the chicken, ranch dressing, bacon, and cheddar cheese.
5. Carefully place the potatoes on a baking sheet, and slice them half way down.
6. Fill the potatoes with the chicken mixture.
7. Top with more cheddar cheese.
8. Bake for 20 minutes or until cheese is melted.
9. Top with sour cream and scallions.
10. Enjoy!

Jeez, Tasty's comment section sucks. Nothing about the food and I see a bunch of hardcore vegans trying to force their beliefs on others. Vegans we know you don't like eating animals but you don't have to preach how much they need to stop eating meat. An example of this is Cruelty Free Gains or something like that. Last week he made a comment about race. This is an example of a bad vegan. You make the actually nice ones look bad. Props to you nice vegans out there, I respect you. +DarkSpectrum When you live by yourself and you buy a whole rotisserie chicken because its damn cheap ($5 for an entire chicken), its hard to eat all of it in one meal. But it can get pretty dry (and boring) to just eat the leftover chicken. So usually I will eat what I want of it for one meal, then take the rest of the meat off and just pop it into other recipes. My favorite use for leftover chicken is chicken tortilla soup cause it isn't dry at all. Also, if you're feeling extra frugal, you put the chicken carcass (after you've taken off the meat) and leftover bones into a stock pot and make damn delicious, homemade chicken stock - better than anything you'll get at a store.

we never finish everything here, especially rotisserie chicken, my husband doesnt like it so when my dad brings some, whatevers left it good for a recipe like this. usually chicken tortilla soup because the leftover isnt enough for another meal, but make a soup and with all the veggies, it becomes a bigger meal

I see more people complaining about vegans than the actual vegans lol. Seriously tho some vegans can be really annoying, like the ones who basically attack people for eating meat and sometimes even vegetarians and trying to get everyone to be vegan like them, yeah they're annoying. This coming from a vegetarian (idk what I'm doing here tho lol. I just like to see people cook). I've made every dish except the potatoes. The buffalo dip is spicy but you can add sour cream to cool it down. For the teriyaki I would add sliced almonds and sesame seeds.
