If you don’t have a thermometer you can use the cold water method. And yes you need your stream in the hot sugar syrup. You can even use a hand mixer if you wanted😊
Wow! Marshmallow was one of the first recipies i tried in my late teen and miserably failed! Never tried again but now that i see a recipie from you, will definitely try. Just one question, can this be made using agar agar that you used in some other recipie?
