    Made one change: I despise zucchini so I shredded a potato instead. I also added scallions because I'm just a scallion guy, and it is AWESOME. Definitely being added to my regular recipes.

    I added about 2-4 tbsp of flour to make the patties easier to mold. Then I fried them over medium (5) for 3 minutes each side. OH MY GOSH, delicious!!! These are going to be great with sour cream.

    I made it and it tastes too gud. My kids love it. I used corn flour instead of eggs and did shallow fry with little amount oil. Thanks fir sharing recipe

      Ah I wish I had read comments! Cornflour way better idea than eggs. Mixture turned out so runny and even adding bread crumbs couldn't save it! Most is now in the bin ☹

    I just made them and they were beyond delicious. One tip I have: store them in the fridge for at least 4 hours, otherwise they will break during turning upside down.

    Adjustments and Notes:
    1. If your using large or extra large eggs use only two eggs.
    2. Squeeze juice from carrots and zucchini before cooking
    3. This recipe is really bland so I use one tablespoon of lemon pepper with a little bit of ground chipotle pepper, plus salt. (I may try it with a little mustard and or dill next batch).
    4. I chose to air fry mine; not as crispy, but it works and is healthier.

    Nice! I recently made salmon patties and we made hamburgers with them. Me too, i mixed the mushed salmon with zucchini and carrot. We cooked the salmon with a little bit of water in the pan. I only wanted the salmon to cook and not be fried.
    The hamburgers turned out great!

    Update . I made this today .. very nice 👍 I only used 2 eggs and instead of having to cook the onions beforehand I put in chopped red onions and garlic granules 👍Had to use breadcrumbs though to thicken up the mixture to make the patties . I didn’t strain the zucchini so I should’ve done that .I also put nutritional yeast flakes in there 👍

    I have been searching for an hour to find a nice recipe with quinoa. That's it, I found it! :) Thank you, this looks amazing. I also do not eat eggs and am not really skillful with bananas nor chia seeds as replacements, so I will try to bake them in the oven. Hope it will not be too dry.

      OK, I tried to fry them without eggs, I just added a tablespoon of flour and half a tablespoon of bread crumbs to the mixture (those who avoid gluten can add chickpeas flour. I think it can work just fine. I did not have a spatula and I handled them with a fork and my frying pan was not good so they were sticking and that's why they decomposed a little and the final presentation was not excellent, but the taste still was awesome. I put the other half of them in the oven, so I will be able to compare the results.

      As another person mentioned some chickpea/gram flour with a tablespoon of water or so will help bind the ingredients without the need for adding eggs and has the added bonus of being wonderful source protein and is good for you. Another trick is to add aquafaba (some of the liquid found around the chickpeas in tinned chickpeas) and /or adding cornflour or coconut flour. Corn flour is great for thickening mixtures and coconut flour is great at sucking up any moisture (there will be a lot from the veg) in any recipe. Coconut flour is so moisture-absorbing that you literally will only need a tablespoon or two in a whole recipe. Another trick is to use a can of any beans (drain & rinse first), but I find any white canned bean such as butter beans or cannellini beans mashed are good and also will up your protein intake as well as being a useful binder. Hope this helps!

      You could also grate a little halloumi cheese and add this to the quinoa/veg mixture as halloumi stays firm while frying. I often use that to add some protein & extra flavour to vegetable patties/cutlets. A little crumbled Wensleydale cheese or feta cheese both work well too (if adding these you may need to add a few breadcrumbs as feta contains a lot of moisture in it. If you are on a vegan diet or are making them for a vegan a few tablespoons of nutritional yeast will add a pleasant savoury cheese flavour and is a good source of vitamin b12 for them.

      The ratio of chia /flax "eggs" should be 1 tablespoon of chia /ground flaxseed to 3 tablespoons of water to replace each egg. Ten tablespoons of water sounds like too much moisture. Also I would just do 2 tablespoons of ground flaxseed to 6 tablespoons of water, let this mixture sit for a few minutes until it coagulates (it will become thick & gloopy aiding binding of mixture) , then add to the mixture in bowl. If there is too much moisture simply add some breadcrumbs/panko (you can even use crushed crackers for this) to firm up the mixture to your desired texture before shaping mixture. Adding a tablespoon of coconut flour will also help as you only need small amounts of this to suck up any excess moisture in a recipe.
      If people are finding this recipe too wet it may also be because a lot of other fritter recipes add a small pinch of salt to the grated vegetables, place this over a fine seive over a bowl (or use a regular seive lined with a kitchen towel or clean dishcloth) , leave for up 10-15 minutes, then squeeze out moisture (several times) . This helps to remove excess moisture and makes the fritters more crisp when frying. The moisture released by this method can be re-used in stock/soups if you don't want to waste it. You can then proceed with the recipe as stated, frying it with the onions and garlic. The resulting mix should be less mushy and fry better creating a crisper result.

      @@leemager128 I see this is a very old post(!) , but to replace an egg you would use 1 tablespoon of either chia seeds Or 1 tablespoon of ground flaxseed with 3 tablespoons of water (to replace each egg in a recipe), mix, let this sit and then add to the rest of the mixture in the bowl. It replaces egg in any mixture, but I would only use 2 tablespoons of ground flaxseed with 6 tablespoons of water. If the mixture is too wet add 1 tablespoon of coconut flour or a few tablespoons of breadcrumbs to firm the patties up enough to form them. Another option is to just add the chia seeds or ground flaxseed (without any additional water) straight into the bowl with the veggies and quinoa, as the vegetables already contain moisture.

      I was reluctant to try Quinoa because I thought it would be terrible as well. I had seen a vid where it can been toasted first then thoroughly

Also you could use a ground 'flaxseed-egg' mixture as a substitute. 1 tablespoon of chia seeds OR ground flaxseed to 3 tablespoons of water, allow this to sit for a few minutes before adding to the mixture. Any excess moisture can be mopped up with a tablespoon or two of cornflour or coconut flour or a some breadcrumbs. Some people use a can of mashed up white beans instead of eggs to bind the mixture. Many Asian people use a tablespoon or two of chickpea (gram) flour with a splash of water to replace the eggs.

    I tried this, only had dry parsley. I'm sure fresh adds a special yum to it. I couldn't form patties though. My mix was too moist even had to add almond flour to dry it up and still couldn't form patties. So I plopped a 3rd cup in the frying pan and used my spatula to form patties. They're good, sorta like egg foo young.

      I had the same issue. Mine was wet too and I used my spatula to form them. I fried them anyway without adding anything to dry it out. Still yurned out good.

      You could remove one egg or replace it altogether with a can of mashed white beans to bind the mixture. Cornflour or a tablespoon of coconut flour or breadcrumbs added to the mixture will help to mop up any excess moisture making the patties firmer. Gram flour (chickpea flour) with a little water instead of the eggs also works. Also if you add a pinch of salt to the grated vegetables, leave this in a seive/colander over a bowl/sink for a few minutes, then you can squeeze out a lot of the moisture from the veg which helps to make a crisper, firmer pattie.

      Oh yes... I used frozen mixed veggies and added baked chicken breasts and cheese perfect for the self quarantine season 🤷🏾‍♀️

      I didn't have any zucchini, so I omitted it. I made 1/2 of the recipe. I added 3 tablespoons each of chickpea flour and cracker crumbs, about a 1/2 cup of chopped bell pepper and other sweet peppers, turmeric, smoked paprika, one chopped green onion, plus dried thyme, rosemary, sage and parsley.. I like the crunchy taste of the vegetables, so I add them to the mix and allow them to cook in the patties versus sauteing them. This is a great starter recipe that you can modify to suit your taste.. Thank you!

    The recipe is really interesting, it looks tasty and easy to make, and very healthy. I have added quinoa to my diet recently with True Elements Quinoa and it is really nice and yummy! I'd definitely love to try this recipe, looks really yumm. Thanks for sharing :)
