How to cook Prime Rib on the Weber Kettle 22 Performer

  • I'm so excited we get to show you how to cook prime rib on the Weber Kettle! Our model is the 22 inch Performer! Using a charcoal grill can be intimidating to some that are not familiar with the process. Especially when you have a 3-digit cost piece of meat to think about such as a bone in rib roast, prime rib or other premium cuts of meat. A offset smoker such as a Yoder Wichita or pit boss can be only a little bit easier to some. And a pellet grill like a Traeger or Yoder takes all the fun out of it sometimes. So I break out the trusty Weber Kettle 22" Performer and show you how easy it can be. I try and explain as clearly as I can some easy steps to ensure your prized piece of meat will come out perfect. As inspiration for this I searched the TH-cam arena and found Cooking with Ry's video on the same subject re assuring and provided me some motivation. That link is below. I've also included some handy links to some tools used in the making of this tutorial.     Thank you so much for the inspiration and your nod to Cooking with Ry. With both your help, grilled a 7 bone / 19lb Prime Rib roast on my 22 in. Weber.
    4 hours 45 min total, pulled off at 131 degrees. Just used rub supplied by butcher (sorry, don’t have particulars but it was good). And a little hickory here and there.
    It was very good. A lot of compliments from the family. A good (great) Easter. Thanks!

    Enjoyed the video. I’m also a big fan of Ry. I was also in the Navy but not as long as you. To this day, I can’t tie a slip knot or a half hitch. Can you tell me what that big knife is that you used? I’v seen other guys use them and like to know. Thanks.

    Love this video, agree with everything. However you can skip the trussing, been a butcher 12 years and have somewhat of a clue what I’m doing. I would only truss if it was golden lion or boneless. Keep it simple😁🥩👍🥩❤️🇺🇸

      It keeps the roast together it will come off the bone on the grill sometimes

    It’s a standing rib roast because it’s choice. Can’t be prime unless it’s prime. No such thing as a primal section of a cow.
    Great cook though.

      You can have primal cuts, which are broken down to sub primal, which is a rib roast.

    I do long smokes on my WSM, but with a couple of Weber 22.5" kettles, I have cooked almost everything, almost every way, so much fun! I've found rotisserie with rib roasts just rocks. Tying up, salting (more than you think) and leaving on a rack bare overnight in the fridge does make a big difference before spinning it on the cook. Thanks!

    Question, why did you tie off the meat? I tie mine off, but, I cut back the bones before cooking. Just curious

      It’s not necessary. It keeps the spinalis from pulling back over the eye, but I don’t mind that. It’s mainly presentation

      As I recall it was mostly about low and slow until the right internal temperature, I suppose it was about 4 hours or less...
