Yes, you are right. All comercial food items may tasty but not healthy. They use refined oils & duplicate ghee(either pure ghee is not availble or not interested). If they make items with original items the rate will be above 1000rs per kg.
Have not tasted Guru's, Ganesh's and Santhanam's versions of mysorepaka yet but I want to after watching your video....lest I am biased for Sri Krishna's and Mahalakshmi's versions

I would not call any of them Mysorepak. All of them are squishy. For me, Ghee Mysorepak should be hard with air pockets inside, the texture of wheat rusk, and much less air pockets. Anyone can make these squishy Ghee Mysorepak. However, making the ghee-based hard Mysorepak is an art form. This Mysorepak is light yellow at to and slowly becomes brown as you go down the bottom of the tray. This colouring is the result of the bottom layer getting further cooked even after the hot dough is poured into the tray for cooling. Please note the following points. The batch size of this Mysorepak is restricted by the heat output of the oven on which it is prepared. If you place a larger-sized batch of dough in the oven and cook it, you will end up preparing squishy Mysorepak. Further, you get a window of a few seconds to pour the dough into the cooling tray, once it is cooked. If you delay the pouring by a few seconds, the Mysorepak gets burnt and turns dark brown or black. If you time the pouring a few seconds earlier, it will be undercooked and will retain a light yellow colour.
At last found someone commenting exactly what I had in mind. Mysore pak is originally how you describe it 🙏 Sadly it is lost in the hype for ghee laden sweets.
I like your channel for your humility and slow college professor way of explaining ,way you covered TN hotels is amazing ,now Mysore Pak ,Kannadigas inventions and tam Iyengar made it popular (ex cook from mysore palace), great that you covered Mysore Pak and without rating it . real Mysore pack is not ghee laden ,is brittle ,medium sweet and stays for one month without issues .

Did you check what ghee is used. It give some sort of smell keep this for 2 to 3 days, of krishna Mysore pak. When I spoke to them reg. Above they answered rudely.
Not sure which ghee they are using but they said they are bringing fresh stock from Coimbatore every day to Bengaluru, in order to maintain consistency.
