Mangamma Tiffin Room, as they call it was earlier run by a granny named Mangamma and now she has handed it over to her neighbors, who maintain the same quality as earlier. 4 small sized idles served along with a fiery red chutney is a great deal. The idly was soft and spongey, but it was the chutney that elevated the idly experience. Though they are serving idlys there, which one can stand and eat, most of the crowd come there for takeaway. While one idly is sold 15/- and upwards in other places, this is an amazing deal.

Odisha culture and Odia food are untouched and remained immune to external invaders due to its kings. When Bengal, Hyderabad or Karnataka remained under occupation of invaders, Odisha remained independent . Gajapati kings fought against Bengal sultans, Hyderabad empire, Jaunpur islamic rulers to save its borders and at one point, it extended from hoogly in Bengal to todays karnataka and some parts of Tamilnadu. Its food culture remained unadulterated because no outsiders could conquer and rule this state. You would rarely find Biriyani in odisha, but in southern states Biriyani is a staple . Being a coastal state, fish is heavily consumed. Odia people prefer Mutton over lamb . Use of spice, oil, ghee is less when you compare with states like Karnataka or Bengal etc. Vegetables and sweets are also consumed heavily . In short, odisha food is relatively less influenced than other states.
Thank you very much for those information. I love Odisha cuisine, there are so many dishes (hidden gems) which are known very little outside Odisha. By the way, ghee is less consumed in Karnataka also. Adding excess ghee in idly and dosa is a very recent trend introduced by some new age eateries.🙂

'Pazhya Soru' is the name for this in tamil nadu. This has been the staple beeakfast for the farmers in tamil nadu for thousands of years ! Obviously here in this video, all other items shown except pakala are the marketing and promotional trick of the hotel. If any one eats the full platter , he should reserve a bed in the nearest hospital !
In all states where rice is a staple, this fermented rice is part of their cuisine for centuries. Similar to Tamizhagam, in Orissa also it was served in Puri Jagannath temple for 1000 years. I’ve mentioned about the Pazhaya soru, Kerala’s Pazhamkanji etc., in the video as they are called by different names but the same dish. By the way, all those additional dishes are not part of the thali, we have paid separately to taste those Odiyan delicacies and were shared by 4 people. Only the sides in small bowls are part of the thali.
In Janta hotel, khali dose is a must have.

There was an hotel called malabar which was located in balepete, their masala dosa was unique coz of their different palya, it was an great place foodies, unfortunately closed few years ago

Masalae Dosaes originally are from Cubbon Pete, old Bangalore's Petes. The Udupi - Coondapur chef - entrepreneurs took inspirations from Cubbon Pete restauranters in the early 1920s when half a dozen of them came to Bangalore to start their enterprises. In entire South Kanara - Udupi one doesn't get good idli, Vadae, Dosaes like the one get in Bangalore

Though the dishes are prepared by the regional chefs, finally they get served by waiters who are from North Eastern India. Unless they are properly trained, this will happen. In the highly volatile food industry, with people regularly moving around, it will be a challenge for the restaurateurs to give quality food and maintain these customs. By the way, do way have any guideline available (either a book or on internet), that one can refer to uphold these customs?

I can confidently say that many morning street vendor idlis will be very good. I have one here in Hosa Road market, near my place. His idli sambar is very tasty - idli not made with rice rava as many hotels do. Almost every area has 2-3 popular street tiffin vendors.

Mysore Bonda recipe has variations and the most common version is Maida based which is similar to Goli Baje. Only in TN, I 've seen Mysore bonda made with Urad dal. Sure, sometimes to get crisp audio and to eliminate external noise I have to hold it. I’ve mentioned about the origin of Masala Dose in another video on top 10 masala dose places of Bangalore. Agree on that Udupi origin part, but was it not from Krishna Battru of Woodlands who invented masala dose? All we get on internet are hearsay. It would be interesting to see if there are any documented or recorded history of masala dose.🙂

This sweet sambar is not native to Bangalore but came from Udupi. Even now, most of the Bangalore households make a non-sweet, spicy sambar only. By the way the Bangalore style sambar dip in a cold weather is unparalleled and once you acquire a taste for it, you’ll cherish it.
