If its colder outside than inside, open cell.
Up north the cold causes condensation which can lead to moisture problems. I'd recomend mineral wool and gps foam board.

Always thought that process to be quite wasteful. Do they recycle the ‘cut off’? Maybe grind it and use it in another production?

It's mostly air, probably a few tablespoons of wasted liquid at most

No risk once its settled. You just dont want all that expanding foam in your lungs and on your clothes

If done right it can produce a massive R-value for the wall. About 4 times what you'd get from a concrete wall with ridgid foam insulation, I think
