- I used to not be fan of carrot cake until I tried this recipe from my cousin. Trust me, it’s the best carrot cake I’ve ever had. It’s delicious, moist, and perfect for any gathering.

I just made this carrot cake today and it turned out great 😊. I added a handful of chopped pecans and a handful of raisins. I usually try and reduce the sugar content so I just used one cup of golden caster sugar I baked it in an 8x12” dish . Really good 😊 Thanks for sharing. That’s a great tip for shredding the carrots in a hurry. I can’t believe I have never thought of using the food processor before. I used to grate them manually and try to avoid grating my fingers as well 😩
