When I make my covers I usually try to learn all the notes by ear. If I can't then I'll look up sheet music online and most of the time the only type available is piano sheet music. Then I'll transpose the notes from the piano sheet music from C to Eb.
Awesome covers, though I think this definitely highlights how much dissonance ZUN uses, especially in SA. The single instrument can only cover so much of the song. Still, this is definitely impressive
