I just bought it! I follow your channel for about 90% of all Chinese food I cook. I've never failed any recipe I attempted from you channel. You always explain everything so clearly and even teach things like time management when cooking multiple dishes which is rare for other channels. One of my specialties is East Coast-style shrimp in lobster sauce, which uses ground pork, black bean with garlic, molasses, beaten egg, green onion, and of course shrimp as its principal ingredients, a recipe adapted from the famous Kowloon restaurant in MA. Congratulations on your cookbook. I like your recipes, and have often used ones I have never tried (I'm Cantonese, too). However, I stopped using vegetable oils (soy bean, corn, peanut, etc.) and switched over to Avocado oil for much healthier cooking. It also have a smoke point of 525 degF, so you can really turn up the heat for 'wok hei', especially in your 13.4" wok I just got and used last night. I made shrimp fried rice in it and it turned out soooo much better than the carbon steel wok I had been using. The sides are so much higher, too, so that pounding the rice apart in the wok didn't cause everything else to go flying out of the work.
