We grew up eating ginger chicken. You can pretty much toss yellow or white onions in it. If you don't have the wood ear mushrooms, you can add red, yellow, or green pepper in it. No need for those mushrooms.

This looks really good! I spent about a month in Phuket Thailand between a few trip in 1999 and 2001. I hiked the whole Island staying away from the touristy spots and this looks like some of the dishes I had there cooked by little old grandma's in little huts. I am glad to have found this series. Mama Noi knows whats up, Old School Thai cooking not that fancy resteraunt stuff. I'd love to see a recipe on spicy chicken foot soup, or spicy shiny nooodle with onion greens and basil
