Thanks to his brilliant tips concerning temperature, and that mean tiger sauce, I was able to make the best roast beef sandwich I've ever tasted. Remember folks, carryover heat is a real thing! Literally every recipe I looked up said to pull it out at 125 F ! THE MAN LIVES ON!

One time my cousin's daughter and friend came for a visit he made a huge breakfast and she took pictures to send to her mom of the table. She was bragging that she was about to sit down to all that food! She was STUFFED before she got up from the table! :)

Thanks I always overcooked my roast beef. I did not know I should have pulled it at 105. I always pulled the roast at rare on the thermomter at 135 and then ended up with shoe leather. I passed the info to my son as well so he will have great results on the grill. Thanks and RIP Steve. Love the cooking show.
I recently bought a thermometer similar to that and my food has improved immensely. I have a bad habit of overcooking chicken until its dry but not anymore. I just made a stuffed chicken breast and it was so moist and juicy. Best chicken ive ever made. Its truly a must have in the kitchen.

What a shame I didn't discover Red until just before he passed. I wish I could have met him and shared on of his meals. This video finally made me buy a slicer. It's a chef mate, and looks identical to his, but only cost $60 on Amazon. It passed the first test, slicing summer sausage very thin, and splitting a Flatbread. Thank you kind sir, for sharing so much with us.
I just found out about Steve passing on. I'm sure that he is cooking with the angels in heaven! We are all blessed by the gifts he has given us through his sharing and passion for culinary art. My heart goes out to his family.
My condolences to the family, I just seen the comments and that kind of explains why I havent seen his videos coming up for a while. I'm in the navy and when we were on stand by and had down time me and people in my shop would watch his cooking shows. He was an all around great guy that really loved his family and was passionate about his hobby of cooking. And that's just what I know from watching his videos, the world is a little less bright without him in it. His pickling stuff videos were always the best because no matter what he was gonna pickle, the container always ended up being ¾'s of the way full of sliced up onions and then a little shrimp or chicken livers or what ever else lol. So every time we seen a new pickling video we always wondered if it was gonna be over half onion lol, just something we all thought was pretty funny. A great guy though definitely, I'm really actually pretty sad he is gone even though I wasent a close family friend. I feel like everybody was family and friend to him, he will be greatly missed. Rest in peace Shotgun.

Baltimore is known for their pit beef and tiger sauce sandwiches. To die for. Everything cooked in an oven will continue to cook after it's taken out. That's why my Thanksgiving turkey is always on point. I take it out sooner knowing the temp will go up even after removing from oven. Thanx for the recipe. 👌

Use home made beef stock. When I make my own beef stock I don't use any salt in my beef stock. If I use store bought I always use unsalted because salt can and is added in other portions of a recipe. You get better control over the salt content with using unsalted stocks.

Use home made beef stock. When I make my own beef stock I don't use any salt in my beef stock. If I use store bought I always use unsalted because salt can and is added in other portions of a recipe. You get better control over the salt content with using unsalted stocks.
