I'm from Åland but I live in Sweden, and what I miss most of finnish foods are: - Ässa mix icecream, not many places in the world you could get a salmiakki flavoured popsicle! - Hesburger, mcDonalds just isn't the same - knackkorv/nakki makkara - the little burgers in the fridge in the store, pirkka or atria or any brand, they are probably the worst thing you could eat healthwise, but oh so good! - Jaffa cakes, in finland they have several different kinds in almost every store, here Im lucky if I can even find any Fourtunaly, they do have finnish ryebread here though, wich is the most inportant thing!
Oh yeah. Maksalaatikko + lingonberry jelly has been my favourite ever since I was a little kid. Also herrings and potatoes ("uudet perunat", that is first harvest potatoes with dill preferably).

Lihakukko, perunakukko, lanttukukko, lohikukko, ahvenkukko and muikkukukko are all great. (Kukko is a dish what is basically a rye bread which have some kind of filling inside of it. Kukko is orginally from Eastern Finland and most kukkos are made in Kainuu, Savonia and North Karelia. Word kukko also means rooster or cock.)
My father likes kalakukko so much that in summertime he drives his Harley Davidson 550km to Kuopio and back just to buy it. They don't sell it here in Etelä-Pohjanmaa. Eventually he learned to cook it himself. :D
you definitely want to try out pekonisienet, or blue cheese/butter cheese filled champion mushrooms wrapped in bacon and barbecued. just pick your favourite soft cheese (try aura blue cheese!!), remove the leg of the mushroom, fill the interior with the cheese, wrap it in a bacon and barbecue it until the bacon has this nice crispy look, nothing else needed. been my favorite summer food since i was a kid.

Turun sinappi is actually now the fake product. It was originally made in Turku, hence the name, but the production moved to Poland, and then to Sweden. Auran sinappi took over the old factory and they make mustard the way it used to be made there (Aura is the river that runs through Turku city).
Fish soup is so good. Just pike, potato, small amount of carrot, hint of leak, and pour milk all over it. Salt and pepper. Maybe some butter too, but some people fry the fish with butter first so you get that taste. Then, when you have the greatness on your plate, you have to do one thing to make that dish divine! You need to take a fair amount of näkkileipä (crisp bread?) and put it in the soup. I make big chunks that I toss there. The dry bread sucks all that soup liquid and turns in to mush and it is literally better than anything I've ever eaten. Maksalaatikko, cold, is also one of my absolute favorites. When you warm it, it loses some of that fancy taste. And texture!

Then when potatoes came into Finland they started to use it in the filling and finally when rice came it supplanted barley from each and every food item produced in Finland and now it's even replacing it in beer manufacture. Today one can get paraboiled barley in stores so one can make easy barley dishes. Paraboiled barley cooks as fast as rice. That was the whole problem: cooking barley so that it is soft and palatable takes hours whereas rice takes minutes.
Christmas ham in Finland is often smeared with Turun Sinappi and then sat in the oven until it falls apart in your hands (at least 8 hours). Greatly recommend.
Hey Dave! Have you ever had Karelian hot pot - or as we Finns call it, karjalanpaisti? I strongly recommend trying it out in case you haven't already. A couple of other dishes that I'd recommend are hernekeitto (pea soup, but you MUST have meat, yellow onions and Turun Sinappi in it), pinaattikeitto (spinach soup) with a few boiled eggs and a karjalanpiirakka on the side, mustamakkara (similar to your black pudding but a little bit different) and leipäjuusto (bread cheese/Finnish squeaky cheese). If you feel brave enough you could also try rössipottu. I am not even going to elaborate on that one, though :D Also, a traditional "känkky" from Oulu is a MUST. Känkky is essentially a pizza, but it's made in a specific way that is typical to the pizzerias and restaurants in Oulu. You'll have kebab and mayonnaise on it among other toppings of your choosing. Seriously, go visit Oulu and try it out. If you don't like it, I'll pay for it. Cheers!

Or I think that you would like jauhemaksapihvit, which is like a meatball textured patty with ground beef and liver. That with lingonberry jam and mashed potatoes and you'll be in heaven, I swear.
I've had the lucky chance to experience going to Finland (for a short 24 hours) in January this year and I'm just waiting to go back! I've applied for exchange next year to Helsinki and I'm praying that I get accepted. I don't understand how Finland is so under the radar compared to most European countries but in a way I'm glad. Living in Australia, I'm so jealous you get to go to Finland so often. Keep up the Finland vids !

You can buy them freshly picked from farmers markets, and you can get some pickled ones in stores. My favorite is suolasienisalaatti, a salad made from mushrooms preserved in salt.

Maksalaatikko and Pinaattilätyt are my childhood favorite foods. Especially if you fry those in pan so they get a littlebit crispy. Turun Sinappi used to be the best one, BEFORE they sold it to Sweden. Now there are Herttua Sinappi in Lidl and that does taste like the original Turun Sinappi. I buy that all the time, it is the best sinappi. Verilätyt and Tapola Mustamakkara are also very good with puolukkahillo (fryed in pan). Also the Hernekeitto with sinappi, that is very good combination. Some people like to eat is from the can without heating it...
Here in Eastern Finland we have this thing called "lörtsy". It's like a "pie" filled with rice and minced meat, and it's super good, especially when you put ketchup and american salad, "kurkkusalaatti" (like the one with salty cucumber in it, it's hard to explain) on it. You get them with a sugar coating and filled with jam too. I don't know if you can get them anywhere else in Finland, but if you could get your hands on a piece, make sure you test it out. You'll love it.
My boyfriend likes to eat maksalaatikko warm with a bit of butter on it. Since the maksalaatikko is warm, the butter melts and makes it all (apparently) super yummy.
That "maksalaatikko+puolukkahillo"-combination really is amazing, also fast & cheap. Also, since you already like lingonberry jam I'd recommend blood-pancakes and blood-sausage with the lingonberry jam... also ofc. sautéed reindeer with lingonberry jam. Also dried reindeer meat, but that might be a bit costly down in the south
All of them; massively good!!! It feels strange to see something, that I agree SO MUCH in the internet. I am especially happy, that you stretched the importance of the raisins in the maksalaatikko! Although, while I love the Tupla VERY, VERY, VERY much; when eating them all through the year, the Fazer Blue wins ALL the other industrial milk chocolates.

If you like the herring marinated in mustard, you might want to try some other marinades: onion is probably the most popular, at least here in Sweden. There is also a version called "Skärgårdssill" which literally means "archipelago herring", but I don't know what the sauce is made of. Also reasonably popular is "Romsill" which is herring marinated in a sauce with the eggs of some fish.
Original "Maksalaatikko" shall have raisins!I personally like it best when putting some butter in the middle,and heating it in a microwave owen until the butter melts..

I have found that just olive oil is fine! The taste of the actual piirakka comes out better, and the main point is no longer the topping.

It's like a "pie" filled with rice and minced meat, and it's super good, especially when you put ketchup and american salad, "kurkkusalaatti" (like the one with salty cucumber in it, it's hard to explain) on it. You get them with a sugar coating and filled with jam too. I don't know if you can get them anywhere else in Finland, but if you could get your hands on a piece, make sure you test it out. You'll love it.

My boyfriend likes to eat maksalaatikko warm with a bit of butter on it. Since the maksalaatikko is warm, the butter melts and makes it all (apparently) super yummy.

That "maksalaatikko+puolukkahillo"-combination really is amazing, also fast & cheap.
Also, since you already like lingonberry jam I'd recommend blood-pancakes and blood-sausage with the lingonberry jam... also ofc. sautéed reindeer with lingonberry jam. Also dried reindeer meat, but that might be a bit costly down in the south

If you like the herring marinated in mustard, you might want to try some other marinades: onion is probably the most popular, at least here in Sweden. There is also a version called "Skärgårdssill" which literally means "archipelago herring", but I don't know what the sauce is made of. Also reasonably popular is "Romsill" which is herring marinated in a sauce with the eggs of some fish.

Maksalaatikko is my ultimate favorite too, I have a campaign shirt with saarioisen perinteinen maksalaatikko on it. I had to eat seven boxes of it to get it. 5/5 would do again
