With trevally if you bleed them and brand spike them straight away and have them on ice for 1 - 1 1/2 hour’s absolutely amazing sushimi soy sauce and some wasabi or even done ceviche
That Jack was actually a Jack Crevalle. My dad caught a 27 pounder a few weeks ago. We tried to eat it but the meat was so red it looked like Tuna. I would definitely keep a smaller one though.
Awesome couple of days fishing! FYI that was a Jack Crevalle. Small ones like that are decent but the larger ones are very fishy tasting and removing the blood line is a must. They are great fighting fish and we catch a lot in Florida.

Let me know the best way to share the pics and you might want to make one for those hot days. Nothing better than an occasional fresh water rinse during the day or before you camp.
I have a little tip for you put the hook in the mouth and upwards through the minnows face don't pin both lips together or else it will die quicker because it can't get enough water over it's gills never come off with just the top lip hooked

Hey Micah as much as you fish Bridges you really should think about adding some rubber buoys to your Jon Boat that you can just drape over the side and instead of you pushing yourself off of the pylon every time just bounce off of it with the rubber buoy that way you can focus more on the fishing and less on how close you are to the pylons
