Cheesy Corn Dip PERFECT for 2 to 3 people.

Ingredients
2 cups frozen or fresh corn
3 tbs mayonnaise
1 cup sour cream
4 oz cream cheese (softened)
3-4 tbs chopped cilantro
1 serrano pepper chopped
salt & pepper to your taste
1 tsp paprika
1 tsp garlic powder
2-3 tsp chipotle powder
2-3 tsp cayenne pepper (optional)
⅛ cup red onion chopped
Squeeze of lime juice
2-3 tbs butter
¾ cup oaxaca shredded cheese
Your choice of chips I use Milagro corn chips
and oven safe dish 8 in x6 in x 2 in 20.3 cm x 5.1 cm
