I made the moussaka today with the carrots and since I didn't have any courgettes I substituted red peppers in the soya mince. It turned out well, in fact truly scrumptious and very much enjoyed by all. Thanks again for a great recipe.

The bechemal was a little thick!too much flour in the rue!overall looks good and great idea with the carrots and zuchinni or corguette if your American.
There is no Gouda cheese in Greek Mousaka no carrots the cheese should be kefalograviera or parmegiano and there should be way more tomato sauce than they put in and on the bottom you put olive oil and breadcrumbs in your pan yezz!!

Moussaka base is Potato, Aubergine and ragu. *Ragu is a tomato sauce with meat; vegetarian option could be done with chickpeas as libanese moussaka; another idea is mushrooms and lentils) -Bechamel, is it the first time the guy cooks? In his life? (The butter, or the margarine, with the flour should be a nice velvet cream before adding the milk! Not small balls of dough. And that's why it took tooooooo long to make it and get rid of all the clumps it had. And still, they were at the end...) +Saying that "the vegetarian part" is the carrots... Sorry, but this restaurant knows nothing about food and dietaries. Nothing about nutrition (this moussaka has no protein). Therefore, I have to say that it is one of the mediocre restaurants that unfortunately many of these are found in tourist areas and in the Mediterranean.
You have just replaced the recipe with your own. I eat meat but appreciate vegetarian options. This is good recipe and you can tweak this to your own taste. Mushrooms or lentils can also enhance this particular recipe. Also remember this is a restaurant, so not as lavish with ingredients as profit has to be a factor and balance the equation!
