Honestly I’m so happy you’re making all these plant based vegan recipe videos. I’ve tried a few of them out so far and they taste just as good, or better as the original recipe with dairy/meat inside. I’m also glad you’re using real foods as a replacement for meat and dairy rather than artificial vegan foods like vegan cheeses and fake meats that aren’t so healthy. Pleaseee keep making these healthy plant based recipes, we are all loving them so much!

My husband said thank you, this is the best thing you have ever made (he is vegan, mainly whole foods) we have 2 omnivore children, one vegetarian and one pesce vegetarian. They all raved about it. I have veen using green lentils with mushrooms for a meaty like substitite. Adds nutrients also. Mushrooms expensive in my country. This is a mix between vegan shepards pie and ... looks yummy! Thanks.

Must try this version. Love the sliced grilled eggplants top. Very attractive presentation. I like to smoke my eggplants from my garden (ones my goats 🐐 did not eat) cut into slices in tin foil packet in my tandoor oven plus I add zucchini.
In Romania we make a dip called zacusca with eggplant + peppers roasted over fire and it s a staple, and delicious. Indeed you can make a thousand things with eggplants - more Greek vgn recipes Chef pls!

Feel like a vegetarian version of this would be amazing. Use the mushroom substitution for beef but still use all the dairy to make a real mornay sauce.
I was thinking about the same thing. I would also avoid all the frying and bake the eggplants and potatoes in the oven first or put them on a griddler.
