    Made this recipe for a two tier cake this week and it was AMAZING, the client absolutely loved it! So moist and full of flavour! I wasn’t sure how the yoghurt would impact the layers once frozen and thawed but it made zero difference to the texture and actually retained the moisture beautifully without being soggy! This is officially my go to recipe. Thanks so much for sharing this gem!
    PS. I baked 8inch layers and 10” inch layers in 3inch deep pans. I worked out that the 8” layers would require 1 batch of this recipe per tin and the 10” layers would require 1.5x of 1 batch of this recipe per tin. Bake 10” low and slow as it’s a thick batter and 8” can remain at 180”. Took me a couple of attempts to work this out so hope this helps someone out there!

      Savis Mom yep it was very sturdy with zero issues at all just very moist! It’s best to stack and frost your cake no longer than 30 minutes after removing from the freezer so it’s easier to manage.

    I'm a professional baker and I use her recipe.. It's just perfect especially when you want to soak it with simple syrup it stays fluffffy and delicious and doesn't taste mushy in the end.. For cupcakes I would prefer this to be just a tad bit sweeter. Hope this helps!

    I'm a beginner baker and I tried this recipe yesterday. My family Loved it!!! My mother isn't a sweets lover, but she couldn't help herself. I added a tbsp of cinnamon, some nutmeg and used caked flour instead of all purpose.
    Thank you for this great moist and fluffy recipe.

    I made it yesterday and it turned out surprisingly really moist! Hands down it was the best vanilla cake ive ever tried. I used her buttercream recipe to coat my cake and it actually tasted so much better(alrdy it was heavenly) the next day. Thank you so much for sharing ,you're a gem 💗

    To all new cake decorators this cake your secret weapon!
    It tastes AMAZING.. super amazing and moist, and is only the second best tasting cake i had in my entire life. The first best tasting cake is from the sugar geek show, but it calls for cake flour. I am having trouble finding cake flour. And also, while it tates very fluffy, it is a challenge to new cake decorators..because it is basically like trying to frost a cloud lol. I mean it can be done, but with a lot of anxiety.
    So i was looking for a sturdier cake, but did NOT want to compromise flavor.. and this is it.. this is heaven.. i tried the recipe as is (with the coconut oil) and it turned out moist, light and very very delicious. And handling it and frosting it gave me no anxiety whatsoever.. this is the perfect recipe honestly.

    Emma!!!! I just made this cake and it came out delicious!! And the best: I made it in my microwave!! 😱😱 you put it in a microwave safe container, cover it with plástic wrap, make 7 small holes (one in the center) and in 5 minutes is done!!

    Hi Emma, tried your recipe and it was perfect!!!! very flavorful and soft and spongy. Baked it with a square pan, used vegetable oil instead coconut oil and I used Vanilla yogurt. it was perfect and it was finished within the hour. Subscribed and turned on notifications.     I just made this cake using one 10" tin and I checked it at 30 mins exact and the toothpick came out clean. It raised beautifully!! I'm so overwhelmed with the moisture and flavour seriously!!! I have tried so many vanilla cake recipes and got so fed up because nothing was wowing me but this recipe was amazing. It's so soft and moist. It is more dense than I thought but that's okay because the cake melts in your mouth so it doesn't feel heavy or anything. My family really like it and I can't wait to make it again!!!

      @@xabeerx2344 The best way to keep your cake nice and moist is to monitor it carefully. Every ten minutes or so, stick a knife in your bread. As soon as the bread stops sticking to the knife, your cake will be ready.

    I made this today for a coffee cake and it was amazing! Soft , fluffy and tender, just like a sponge cake, but moist and buttery! Mine lost a bit of moistness in the fridge, so I do recommend soaking the layers in simple syrup. Anyway, this just became my go-to recipe!!

    I did not make the frosting. Just the sponge. Added a bunch of chocolate chunks. Turned out beautifully. It’s got a lovely crumb. Texture is literally in between an all butter and an all oil cake. Thank you!

    I just tried this recipe now and it super, super moist.
    However, I made use of Soya oil.
    I also cut down on the sugar because I really don't like sweet cakes.

    U guys, let me tell u Ive been looking for a vanilla cake recipe for a abt a year that stays moist even in the fridge, for the longest time. THIS IS THE SHITT!! and so i conclude this is the ultimate vanilla sponge recipe I’ve ever tried, its just so moist and heavenly 😍 this recipe yielded perfectly for 2 six inch tins, and i substituted coconut oil for 3tbsp vegetable oil. Even when the batter was done, i could tell it was gonna b a bomb ass cake from the consistency of the batter 🤤
    Seriously, make this cake if you want a quality sponge cake. Don’t bother try Yolanda Gamps or even the scran lines, even tho i love the two bakers, their recipes just don’t add up to this one 😍

    I tried this today so delicious. I don't have yogurt i just add more milk and i steamed for 20 minutes. I use custard cream for frosting and top with grated cheese. Thank you for the recipe. 🍰😋

      Mythical, yes you need to add the oil and the yoghurt. You don't have to use coconut oil though if you can't get that - you could use vegetable oil, sunflower oil, peanut oil or groundnut oil instead.

    I just made this with coconut milk instead of cow milk. Then I made a coconut caramel using the remaining cocunut milk, vanilla, and a lot less sugar than one typically sees in a caramel. It reduced gorgeously and turned a lovely nutty brown colour. So rich and delicious in the middle and on top of the cake. Like a tropical Victoria sandwich 😄 Thanks for sharing. The way you present is very appealing and relatable. The great recipes are icing on the cake😉

    Loved it!!! I made this cake recipe into a Victoria sponge with plum jam instead and also butter cream , it tasted better than the bakeries I go to, so moist and soft! My dad is my hardest critic and he loved it!!!

    Emma this was your 1st cake recipe i have tried after buttercream frosting. And it was more than perfect!!!! 3/4th cup was a trouble for me then i searched it makes 12tbsp. Followed ur recipe 100% and results were 99% same😍 thanks alot. 😘😘😘

    Thank you sooo much! I love this recipe! Ive tried multiple vanilla cake recipes in the past, but they would either come out too dense or taste a bit like cornbread. However, this recipe worked out great! It was so light and fluffy, and tasted absolutely amazing! Great job Emma, youre a life saver!

      @@vinasertic9219 I made one chocolate cake along with two vanilla cakes to make three layers. For the chocolate cake you can search Emma's goodies for rich and moist chocolate cake. It is really superb.

    This is my go to vanilla cake recipe now!! This cake is so moist and fluffy and even when it sits in the fridge for a couple days it still is moist and fluffy. But make sure when you use this recipe your milk and eggs are at room temps three too cause you batter can curtail(that’s what happens to me) I love this cake I made it for my family and they loved it so much it finished in 2 days, thank you Emma for sharing this recipe with us.

      The second time I baked this cake I chilled it. I was still delicious but after refrigerating the cake became little dense.
      Then I made it again with frosting but used oil only instead of butter (I thought the butter was making the cake dense in the fridge) but it was the same after chilling it 🤦‍♀ If you're going to frost it you have to use simple syrup to keep the cake soft I guess, or let it come to room temperature before serving.
      But the cake was so good without refrigerating.

      Hi, did you use the gram measures or cup measure? The 270 gms of fliur certainly isn't 13/4 cup.

    Hello Emma! I recently tried this recipe of yours and I can’t thank you enough for sharing it. I have tried a lot of recipes but they all turned too dry or too runny. This came out super moist and flavorful. I have also tried adding lemon and orange zest to this recipe and baked them in muffin tins, and they were absolutely delicious. Bet I can use this as a base for any cake as it was truly the best and fool-proof recipe that there is. Thank you so much Emma! ❤️

    I successfully made this cake. I filled mine with maserated Strawberries and used the juice to moisten the layers which I made one and cut in half. So DELICIOUS!!! How can I send you a picture?

    I made this cake for the rainbow cake and it came out so thin, didn't even reach the edges, came out like a cookie, the quantities were correct , I searched both videos and didn't find what size pans you've used, so I assume that my 9" round pans were too big, You must have used 7"... Can you please let me know or put it in the description for future reference? Thanks
