For the pumpkin pie taco, I imagine either a thickly churned whipped cream or whipped butter (basically something toeing the line between butter and whipped cream) could probably replace the cream cheese (or use eggs and dairy and cook it into a custard to set up) (I always chuckle a little bit whenever a giant, irregular-shaped hunk of Parmesan shows up in the ingredient showcase)
Sushi was playful since the California roll. Sushi means sushi rice, and in Japan it's generally mostly simple stuff that's not the maki rolls over here

Re: your disdain for cream cheese: You can use medium tofu (or a bit firmer/softer, depending on the brands in your area) instead. It will thicken, bind, cream, and emulsify and like cream cheese, but be (essentially) flavourless.
Handy tip... You should always make your sauce before cooking your pasta. Once pasta is cooked, it loses its 'bite' within about 10 minutes. Always serve pasta within 2-3 minutes of removing it from the water if you want the best texture and flavor. It degrades rapidly.

Probably the greatest example of irony: Disliking cream cheese for its flavor while joyously using the demon-weed that is cilantro. I'd rather eat a whole block of cream cheese than put a single cilantro leaf to my tongue for even a second.
Sour cream or plain Greek yogurt make nice substitutes for cream cheese. I thought all of it looked delicious. (I'd have reduced that broth out, whisked in some wine or sour cream, and frozen whatever I didn't use. Don't be so hard on yourself; of course anyone would want to sample all of it.😉
Swap cream cheese with Mascarpone cheese: same structural properties, no tanginess, but a marked dairy taste.

Instead of cream cheese you can puree some cottage cheese/paneer in mixture . You won't get the tangy taste then . Add milk to adjust texture
