i mean there's nothing wrong at all with the recipe. My only personal nitpick is that there's way too much on the thickening side that's going into this cheese sauce. Heavy cream, evaporated milk, AND a roux is WAY too much when most recipes usually only use one or a mix of two of the aforementioned methods. That's probably why people are complaining of it being too heavy when they make this recipe, and I would too, honestly. Other than that, definitely weird that people find this controversial.
Mac and cheese is literally the easiest comfort food in the world. The only way to ruin Mac and cheese is making it too dry. It has to have a shit ton of cheese and cream/milk. You need way more cheese/milk than pasta. Every cheese will taste good as long as there's plenty enough and it's creamy enough. The crunch crust of baked Mac and cheese is a very welcome but optional addition. Ricotta and extra sharp cheddar makes an amazing combination personally. Parmigiano Reggiano or pecorino ramano both make a perfect crust when mixed with bread crumbs for the crunchy topping

I don't even need to try this, I know for sure that I would never like more then 2 pounds of cheese in this kind of food, I like to eat a large portion just with a side of salad but this you can only eat a small bowl as a side dish it is just absurdly heavy. Also I would miss the breadcrumbs which I do find round this dish up better then even more cheese.

I don't get the use of Colby in this, which is basically already cheddar + jack. If you take Monterey Jack and Cheddar mix those up, you'll have a better time because you can adjust the ratio. But I actually find that the best cheese blend is any combination of a sharp cheddar and a sharp strong cheese. A slice or two of a sharp provolone works insanely well when balanced with cheddar. Toss in a slice of American cheese to help with emulsification (because it contains sodium citrate) and you're off to the races.
I think you're confusing Colby Jack (the combo of Colby and Monterey Jack) with just Colby. Colby is probably more like a softer Cheddar, but without the personality of Cheddar. But I agree that it's probably not worth it to use Colby and just have some good sharp or extra-sharp cheddar instead.
