Many people actually dont know about the all-important step of letting the dough sit for about 1/2 hour. I have never tried making them flat though. Maybe i'll try to do two that way in my next batch and see how they turn out.

@ I certainly did. My assumption is that I let the oil hot before I start adding the dumplings, so the outer part fries way too quickly. To avoid that, I turn the fire down to low and once it gets warm I start adding then turn them before they start burning/ getting too hard
Ah, she mentions this in the video (oil shouldn't be too hot) 😊. I actually went to try out Raquel's recipe/method the second after I left you that comment. So even though I didn't see your reply yet, that part stood out to me. My dumplings came out wonderful 🥳! And that's despite making a few changes. I didn't add butter (didn't have any) and deliberately opted for water instead of milk. I can only imagine how good it will be next time with the butter. Still would have been nice for the question to be answered though. I was genuinely confused as to what was making my dumplings hard. Yes I thought it could be oil temperature but I also thought it may be too little baking powder, etc.
Tried it again except this time I used milk and also added the 2 tbsp of sugar. Never again. I realized it only came out good last time because of the changes I made. As a Jamaican, I already knew we don't add milk or sugar (and esp. that much sugar) to our fried dumplings, but just decided to try it out. And NO....just no. That's exactly why dumplings and festival are two different things, not this hybrid mess. It's no wonder she deliberately ignored your question but conveniently found time to like your last comment; she has no idea what she's doing plus a nasty attitude to boot. I unsubscribed.
