As someone who's been there--that Dorade dish is probably the BEST cooked fish I've ever had. Prices are better during happy hour.
The respect I have for morning and evening sous out there is immeasurable. Rock on!
Love her bubbly personality
people are complaining about the price but fail to understand that this is FINE dining. this isn’t your local spot for oxtail lol.
Fine dining is a poor excuse for scamming.
Uh huh? I’ll have the Ribeye and braise my own oxtail.
i mean it is Miami after all. Not a cheap city.
@@anothertarnishedone5960dude it’s a Michelin stared restaurant it’s literally the best of the best food/service. It’s obviously gonna be pricey
If you think it’s too expensive then you don’t get it, and that’s okay, move along.
Never would I thought getting two of the same ad was possible until today

$102 for an oxtail dish and they go through 200 lbs/week.....RESPECT!!!
What an absolute gem! Giuliana might be the coolest chef featured on this series yet!
She is amazing!
excelente saludos de Argentina
Idk how many ppl that oxtail dish is for, but 102 Dollars for one portion of Oxtail is crazy, even at michellin rated restaurants. Even for two portions it is very expensive.
Wait, those prices were in USD? I thought they were in the Peruvian currency lol
@@stuurhuis69yes usd the restaurant is in downtown miami
It’s not a food truck in Miami. It’s fine dining…….
I love these behind-the-scenes looks, seeing the dedication and skill of these people!
im always looking forward to new shows like this
Prep chefs/cooks are needed in every kitchen, if you skip out on that in a kitchen you toast unless you a Michelin Star Restaurant
I’ve never had Peruvian food before, this elevated looks delicious😊
Peruvian food is absolutely delicious. First time I had it is when i moved to the Bay Area and it took me by surprise. In my book, one of the top 10 cuisines in the world.
Ohhh yum!! So much goodness
Looks amazing
i’ve watched every On The Line video and it’s quite interesting when the comments are only completely rude in a video that happens to have a full women kitchen….
Exactly!
Absolutely. It’s like they are fair game. I watch this series all the time and I have never seen comments complain about Fine Dining prices, until now….
so happy this place is getting the loved they deserve
Saludos 🔥🔥🔥🔥
I'm visiting Peru in a few weeks. Whilst I know there won't be dishes like this, it's interesting to see the inspiration behind the dishes. I cna't wait!
She’s great !
$102 for an Oxtail dish?? Is there gold inside of it? Go to any Jamaican restaurant and you can get the same thing for half the price and probably taste the same
giuli is a STAR!!! love this

$102 for oxtail is egregious
I like how the dining room is beautiful but the kitchen has the shittiest drop down ceiling.
Remember when oxtail was cheap? Same with brisket.
And short ribs
Gentrification, my friend
Poor people started showing how much they love it. Should’ve kept it quiet.
$102 for an oxtail dish? It looks delicious, but WTF!
awesome
Love sooo much Peruvian food delicious 🤤🤤🤤
Everything is grandmas recipe
I died inside when she didn’t take a spatula to all those Cambros. It was confirmed as the cart rolled away… 🫠
Oxtails r expensive
Follow up w chef luci!
Oxtails made by Jamaicans is prime
Giuliiii!!! 🎉❤ is the best!! ❤
„“oxtail is the tail of an Ox“. Wow who knew 😂😂
She is brilliant, and so are all of them. This is why America needs immigrants: they can bring their best to continue being a great country.
Jamaican oxtail is the best in the world period
The fact that she didn't use a spatula!🤔🧐
Wonderful
super cool how it is mainly women and the way she cut the fish was so impressive also
Where exactly is this restaurant? I’d love it visit.

She says the oxtail needs to be seared deeply on all sides, then brags about her patience next to completely unseared oxtail she pulled off the grill? Huh?
Its a psyop
“Octail is the tail of the ox.”
Thanks for that. I would’ve never known.

So you turned off comments on the Passover video but not anything else? Hmm....

She forgot a oxtail and its driving me nuts
There are a lot of sides on that oxtail that were not seared at all
❤❤❤
That sear looked uneven
what fish is this ?
Clam family, a Geoduck
Lmao $102 dollars for oxtail.
U clearly have no idea how expensive oxtail is
@@andrewmouzakitis4472Um it’s not $102 expensive even with labor $102 is crazy especially since several restaurants serve delicious oxtail meals for 20-40 dollars. It’s just a Miami surcharge.
@andrewmouzakitis4472 it's like 9$ a pound relax it's not that expensive
@@andrewmouzakitis4472 oxtail has been always a cheap cut for humble dishes. Its absurd rise in price is proof of gentrification. Anyway, I have been in the culinary school, and I can tell you that someone who is charging you $102 for an oxtail soup with vegetables, he is scamming you a lot.
The portion is to feed 4 people
dang I see Valerie around Miami....knew she looked familiar =)

$102 for ox tail??
loml
Just wanted to say this because everyone is laying down their lives to defend the Oxtail pricing: I would understand the “This is fine dining argument” but when looking at the menu online for comparison, it is well above the prices for other items. Even dishes with more expensive ingredients… So the fact that it is a fine dining restaurant does not explain this. It is more time consuming as well but they only put that effort in knowing people will continue to spend 4x what the dish is worth. What is more likely is that the oxtail dish became popular and they increased the price because they knew people would pay for it. Nothing wrong with it I guess, that is business. We can call it like it is.
how many ads can yall fit in a 15 minute video?!
If you're seeing ads, you don't know how to internet.
$102 for a little oxtail salad with tomatoes is nuts. nah
Oxtail is stupid expensive now
@@kjdude8765 but not worth $102 anyway

$102 for a plate of hoisin sauce. Your grandmother must be rolling in her gravy.

"This is oxtail, it is the tail of the ox"
Wow. Very insightful.
A Peruvian restaurant whose dishes are unaffordable for the standar Peruvian citizen. Food gentrification at its finest.
I used to be a Sous Chef and I've lived in Peru for six years. Sorry, but this really doesn't represent Peruvian cuisine. Call it "Fusion", but not "Peruvian".
The restaurant is in midtown Miami. So are you saying that in bougie spaces, ethnic food shouldn't be served?
@@adammoore7447 The owners are Peruvian in origin, I doubt they care much about what a self-proclaimed expert tries to categorize their food as.

That oxtail😂🙆🏾♂️
She said "and we are pretty much all women here"
I saw more than 5 men in the entire video and no overwhelming amount of women.
The owner is a woman, as is much of her staff. Just because you didn't see it doesn't make it not true.
overrated
11:06 canola oil mixed with olive oil? What a shame, a high end restaurant using canola is criminal. They should be using avocado oil
