richie was so annoying the first half of the episode but when everything started to go down, he was calm, collected, and actually trying to be helpful in the kitchen! man knows how to live in chaos congrats on getting to one of the most stressful episodes in the show!

That opening WAS the best for a life long Chicago resident like myself. Lin Brehmer was, as he always said, our best friend in the whole world, the morning dj on xrt for decades. He died shortly after that was filmed, making it even more bittersweet for us. The tour of Chicago included many of the top beef and hot dog stands. Creator Chris Storer grew up in Chicago, was friends with the owner of Mister Beef on Orleans, the place where they filmed the pilot and modeled the set after. They serve half chickens, I believe. With sauteed peppers. It's opening for lunch. They never had an online order system. this was the first day, and they also got the big review, so people were reading about it and started ordering.
Because of the fast paced chaos, some people forget that Richie asked Sydney if "blew" the food critic. Yes, he was being "Richie" and he wasn't serious. However, saying something like that is never ok. Saying it to the wrong person could have serious repercussions (via "street justice" or an official lawsuit). This isn't 1986 anymore. Besides that, you're right everybody messed up with words and actions, and it was chaotic. This specifically includes Richie, Sydney, Carmy, and Marcus.
THANK you for pointing this out. so many reactors either don't notice this or conveniently "forget" it. also, the supervision on Carmy's part is so important here. yes, the pre-orders were Sydney's responsibility however he then also saddled her with a last-minute responsibility of dealing with Tina's son, which distracted her. also, as the CDC, it was his responsibility to oversee her work and they even showed him checking the system. he should have noticed that the pre-orders were on. I do agree that everybody had fault in this situation but I don't blame Sydney for finally snapping after Richie had been all up in her shit since he walked in. everyone has their breaking point.
pre-orders meant they couldn't keep ahead of what was available. with orders coming in regularly, if they run out of something or if stuff gets held up somehow, they can cut off the to-gos altogether or just take off the option for whatever specific thing won't be ready in time. also pre-orders means people already paid and with e-systems it's usually not easy to just automatically cancel + refund.
I love this episode because it's just, so accurate as to how a truly grueling service feels like. It's the kind of shift that, once it's over, has everyone just standing at their respective stations with the same thousand-yard stare Syd had at the end. The first time I had a shift like that I had stress nightmares with the phone ringing and the printer whirring but eventually you kinda get used to it. Kinda.
The part that I loved about this episode is that fucking ticket printer. For those that work in restaurants knows that sound and how stressful it can get then it keep going off and you are behind and it's just a busy day. I love that going off and the phone that keeps ringing and you know Carmy heard that guest that said 'do you guys have risotto'. Oh that review that came out definitely brought some business so I can see that that day would've been busy with preorders or something like that.
