      i’ve heard from real pastry chefs that what marcus did this episode isn’t actually farfetched. one guy said that because pâttissieres have entirely different menus than the rest of the kitchen, it’s easy to drift off into their own little world. they have more freedom compared to the other chefs and sometimes need reminders and/or lots of self control to keep from sinking too deeply into whatever’s inspired them recently. marcus is too new to this to control himself and carmy wasn’t intuitive enough to keep him on track. bad situation all around.

Sydney for the pre-order that's a big one, and then for nagging on Richie for helping not to mention she stabbed him, Marcus for doing donuts at a time like this like wtf. And Carmy for flipping off which went a little overboard but understandably so.

Him being in his own world makes perfect sense given the amount of yelling and batching that happens on a regular basis at the Beef. Sydney stabbed Richie, she should have apologized, Richie however wasn't paying attention in a kitchen full of dangerous shit. It could be argued that he was focused on Carmy, but given how much he consistently eggs Carmy on a regular basis, that argument isn't very convincing. The pre order thing most definitely is not Syds fault. Carmy already shifts a bunch of work that she made clear she did not want on her. A mistake like leaving tye pre-orders up is understandable. BUT it's a problem that could have been handled in two fucking seconds. "oops. O well, those people are SOL cause we can't do that." THATS what Carmy should have done. Instead he had a break down because he won't get help for his issues. And in doing so not only did he cause his two best employees to quit, he STILL was unable to fill the orders. his implosion caused the entire kitchen to implode and they didn't even make a cent for it.

    I was feeling everyone's frustration this episode. I felt Carmy and Sydney more than most.
    So naturally when Marcus showed up with his fucking donut... I lost it a lil bit, too lol. Bro, wdym you've been baking donuts the whole time we've been fucking SWAMPED with orders?!?

      I never noticed Richie lowkey tried to defend him immediately after by asking Carmy to calm down, which obviously didn't work. But Carmy yelling at Marcus probably made him feel it was too far.

    The main thing was to switch off the pre-orders programme, the door-dash connection or whatever. Just cancel most of those orders and do the digital refund to get things back under control. But I feel like everyone was at fault except Tina and Ebrahim. Sydney was being mean, Richie was right about that. Richie was being unreasonable about the review of her dish. Carmy was melting down, Marcus completely failed to read the room and change his plans to help other people. It took the team to lose it this badly, not just one person.

    What some viewers miss but you two got perfectly is that this episode is meant to show the the weak points behind each character, and where they will need to grow and develop in future episodes. It was not just one person's fault that led to this whole breakdown, it was the unfortunate combination of everyone's worst behaviours/habits conflicting with each other at the same time.

      You are right. It’s one mistake, but they could have handled it if they were much more cohesive. Which is what Carmy had said in a previous episode, but he agreed online ordering could work and the restaurant needs the money.
      Poor Carmy responded the worst though, he even yelled at Tina and threw a tray.
      I have seen this episode a few times and I never noticed the throwing of the tray and that he actually touched Marcus when he raged at him.
      He was so caught up in his rage, he completely missed that Marcus could throw him across the room with a wave of his hand. Not to mention how he utterly broke Marcus’ heart.

    It's tells a lot when you say "if I were ... i would have ALSO ..." about every chatracter. That explains how well written and organic this show is. Every character being unique and whole.
    And yeah, it was filmed in ONE SHOT, the black square was for tv commercial, but it was still one shot. Which is something veeery incredible to choreograph. Plus the acting, so good

    I relate to this episode so badly. I once a super busy restaurant and it was only two of us on line. The tickets coming in… the anger of having so much to do… people not doing what they are supposed to be doing. It takes everything to not slip into the madness that is working in a restaurant.

    When Richie snapped back at Sydney (9:18) it didn't even sound like he was mad and just hurt. It sounded like he was on the verge of tears and he just wanted her to stop so he did the only thing he thought would stop her which was just call her a bitch but not even that he asked her why she was only acting like a bitch cause he knows she isn't. So fucking sad to hear the pain in his voice. Ebon Moss-Bachrach is so good at Richie!

    I was really pissed at Sydney and Marcus for leaving in the middle of that nightmare. Marcus just wasn’t doing his job. Sydney made a series of honest mistakes but it was still her that caused them to have a huge amount of orders that they couldn’t fill. She left the preorder option on for the to go app she insisted on. She got an article written about them which probably caused a lot of those orders. Again all honest mistakes but it was still her fault. And the fact that she melted down and started taking out her frustrations on everyone else and then just bailed saying “this is not on me” was completely infuriating.

      i love her, but even i found her a bit intolerable this ep. she literally caused the problem but refused to take responsibility. she crossed the line with some of the things she said to Richie; not only that but also stabbed him. Things would have been all well and good if she apologized to him... but she doesn't. The more I am watching (going into season 2) I can kinda understand why that is... but it still makes me feel some type of way.

I think Richie is too stuck in his old ways making him insufferable, and I think Carmy is a bit of a hypocrite. But what ticked me off about Syd in this ep is the fact that she caused the problem. Then at the end of the ep says that it is not on her. Basically not taking any responsibility and leaving the team to cover for her. That was intolerable. What happens between her and Richie I think they both went too far.

      @@remholloway2579 Sydney made a mistake. Listen to what Carmen says in ep 5 to Markus about mistakes.
      Additionally, because of “performance punishment “, Sydney had been overloaded and other people weren’t doing their part. If Richie learned the tablet like she asked him to, or Carmen actually support her, her mistake would have been caught.
      Carmen losing his mind wasn’t about Sydney’s mistake. It was his unprocessed emotions coming to the surface and he took it out on Sydney. That’s why she said it wasn’t on her, because Carmy’s response wasn’t warranted in proportion to her innocent mistake. She quit as someone backed into her and got stabbed. She was turning into someone she didn’t want to be, and standing up to irrationally bad treatment. If she stayed, Carmen could have (inadvertently) treated her even worse. Thankfully Carmy is better then most of us and understood why he is the one who had to apologize. It’s his restaurant and he wasn’t a good boss. His bad reaction fell like dominos to everyone else.
      The writers are very clever. They really know what they are doing even though a lot of the audience does not get it.

    The main thing I love, is that all three main characters (i consider the main characters to be Syd, Richie, and Carmy) are partially to blame for the mess that happened. Carmy being stressed made him explosive out of fear turning everyone on edge, Syd being impatient and a novice causing her new system to fail, and having her crack under-pressure, and Richie, who was just being Richie (if anything Richie was trying to be the most helpful he's ever been besides episode 1, but due to his personality he makes the situation worse)
    Yes Marcus messed up as well, but he's a supporting character in my eyes, but he's the only one objectively in the wrong, Syd, Carmy, and Richie are just trying to do the best they can in the moment.

    Way too many people let Carmy off the hook in this episode. He completely fucked up. Did Syd make a mistake, yes. Did Marcus not pay attention to the situation at hand, absolutely. But Carmy is the leader and as soon as one thing went wrong he completely went off the rails and set them all up to fail. I've worked in kitchens and guys like Carmy don't last long because no one is going to want to work with them.

      Marcus should have better awareness but the freaking out Carmy does helps absolutely no one. There is nothing they could do but work as hard they could. That’s why Richie tries to get him to calm down.
      Also Carmy easily could have canceled all the orders or at least stopped the machine if he just took a breath but he freaked out.

Even Syd was pissed at him for still fucking about with donuts instead of doing his cakes, the entire kitchen told him to wake up.

    As someone that worked in a kitchen i must say that i'm more impressed that there wasn't more violence in this episode, but maybe is because of how kitchens are in my country i dunno.

    I can’t be the only person that was mad at Sydney during this episode. I love her character she’s definitely one of my favorites, but her quitting like that actually made me so mad. She gets frustrated that Carm won’t implement all of her plans and ideas right away. She wants to be partners with him and help run the restaurant, but the minute things go wrong she just dips. If you want to be in charge you can’t leave when shit hits the fan. I get she was mad at Carm and Ritchie, but by leaving she also was fucking over Tina, Ebra, and everyone else. Also this whole thing was literally on her, she left the pre orders open all night. That doesn’t change the fact that everyone else reacted poorly and made things worse. But for her to act like she played no part in this disaster, and then just walk out on everyone else who was working was some bullshit.

      yea i have to agree... and i hate that I have too. Automatically I want to defend her, but she literally caused this mess, not to mention stabbing someone and hasn't in 2 seasons apologized for it. I think I would have felt a bit better if she finished out the day and then quit. But to leave like that, its a lack of respect and common decency.

      Did you miss all the times she saved the day when things went wrong before? Like how she built a grill out of construction materials because they couldn’t afford to miss a service, how she solved the gangster issue? She instituted the French Brigade even though she didn’t want to, then Carmen literally ran out on her? What is she supposed to do?
      She didn’t dip at the first sign of crisis. What Carmen did in ep 7 is exactly what he said he wouldn’t do. He refused to listen to her, overloaded her and then he severely over reacted which was fuelled by things Sydney wasn’t involved in. He was being abusive and taking his insecurities out on her.
      By things she wasn’t involved in, I mean Carmen’s family situation, grief situation and loan situation. He could easily sell the restaurant and be done with it. Natalie said no one was asking him to fix it. All of that was a part of Carmen’s meltdown.
      Carmen had a severe failure of leadership and it seems no one thing Sydney deserved any dignity.
      I never saw her saying she wanted to be partners. She noticed he needed help and she wanted him to be her mentor. That is why she tolerated him overloading her, until she couldn’t. Her still working there after someone getting stabbed, would have made her such an effective employee. No one should tolerate what Carmen was dishing out.

    ..oh yeah.. this does happen, i seen it personally. we had two of our cooks quit, while opening on our biggest convention in town (comic-con) while the dishwasher called out. i can still hear that fking ticket machine printing non stop lol. we were borderline closing, my team and i convinced our chef to keep fireing food. thats one time when we really worked as a team. after a 2hr rush, we all laied on the floor like we went to war and back.. our manager had to jump in to help with dishes hahaha.. what a day

    3 decades.. i spent 3 decades BOH and FOH. This episode triggered industry-related PTSD. I've had shifts and fevered nightmares that resemble ALMOST EXACTLY this episode.

    Sydney was a baby there and she should be blamed in my opinion, especially her mistake in online orders. I know that episode 8 is watched already, so Sydney also should have apologized for her shitty behaviour. Marcus too. He saw that they are so fucking busy but instead he was doing his stuff, not his work
    After this and next episode my opinion about them was worse, I liked all the chars up to this episode, but these two really messed everything up. They are the reason why I didn't like some moments of season 2

    I'm watching the show on par with you, so I haven't seen more than this but the minute it was mentioned that Syd gave her dish to the food critic on accident, I called bullshit, suddenly her suspicious behavior regarding the dish and the client last episode made so much sense, she knew the guy was a food critic and decided to take matters into her own hands. I like all characters but struggle a lot with Richie and yet at this very moment I was somehow with him, he was the most level-headed and wanted to help, he knows shit, he could've help but no... Syd and her stress and big ass ego couldn't allow help from Richie or Tina, then she literally stabs Richie? the fuck? and what's worse she quit at the worst time in the worst way when this whole shit was HER fault... and the cherry on top was Marcus with his quite frankly dumb as fuck timing. I was 100% in the same mood as Carmy at this point.

      Yeah, I think the point of the episode was to show the weakness in everyone's character. I also don't think she knew the guy was a critic, she just went out after carmy said no in anger and slammed the dish in front of the guy nearest to the kitchen.

      Carmy treated her like shit, and then she started treating everyone else like shit. It's not just that Carmy lost it at her, but who she turned into in order to cope with it. Syd is a fucking angel for recognizing what was going on and removing herself. This is ALL on Carmy for how checked out he's been.

    I genuinely didn't like Sydney in this episode. This is absolutely all on her and she's going behind Carmy's back to make his restaurant into something before he's ready to take that step. And she continues to be annoying in the second season when it comes tona certain other character

      Claire was annoying and Sydney was correct to demand Carmy’s focus lmao
      Carmy asked Sydney to be his partner in the business and all their issues in this episode was forgiven or let go. The least Carmy can do is focus on this incredibly risky business venture he asked Sydney to come on to.

      Blaming Claire was not the way to go about it. She had nothing to do with any of it. She wants Carmy to succeed. If Carmy can't deal with two fronts at once, that's on him.
      In fact it seemed like Claire was inspiring Carmy to find some cool options for the menu and Syd just got jealous that someone else was in Carmy's ear

Then all of a sudden it turned into Carmy and Claire working on the menu even though she has nothing to do with the restaurant. Like logically think about it yourself. If you were getting into business with someone but your partner started going off with a third party coming up with ideas with them for your project that your partner is supposed to work through with you... how would that make you feel? Not jealous, but frustrated. In my case more than a little angry. Going back to Sydney and adding the experience that she had going around to all the places she visited to eat food at and talked to some of the chefs; i would also be very scared entering into this venture in such a limited time frame with someone who is not 100% focused. I got where Carmy was coming from, and while I wished he could have had his cake and eat it too lord knows he deserves it... but that was so not the time.

      @@andrewichigo Even though I didn't like Sydney's actions this episode, I think Syd in season 2 was completely justified with her concerns. She was legit doing a lot of work going around tasting stuff and gathering info for their menu while Carmie flaked on her to hang out with Claire. I didn't get any inclination that Sydney was jealous of Claire at all, just frustrated with how they were supposed to be partners yet Carmie was coming up short in that regard.
