If it's your first time making them, you should definitely go traditional and spread your masa, layer your filling, and fold. (It's important to know the rules before you break them! lol) I'm sure you'll have great success. Glad you're able to refer to the previous recipes I shared for the pork and chicken tamales. You can't go wrong with either. I've never made sweet ones before, mostly because I never really developed a taste for them. I should probably try them now that I'm older. I love my mom’s sweet tamales. She would mostly make the pineapple and raisin ones but if we ran out of those, she would experiment with fruit cocktail. Yummy! My second favorite are pork tamales.

I live in Sacramento and a few years ago my neighborhood Raley’s grocery store was introducing an idea they had to help shoppers save time and money in the kitchen with their magazines called “ Something Extra”. In each magazine they had products pictured with a little detail of information and with some how to useand or what to pair with it. I used to save mine and pick up a couple extra to have in case my sister or a neighbor wanted a recipe that I had and they tried and liked , I would gift one to them. In one of the magazines there was a Tamale recipe that I tried and truly liked it. I planned to punch holes in them and put them into aa notebook for an additional cookbook in my kitchen ; however, I was unable to do that because my older son had broken up with his old girlfriend and moved in with mom , then he was moving his childhood sweetheart in my home and throwing away my stash of magazines that he thought were useless, without asking. This really hurt me especially when he didn’t ask me first, because my favorite Tamale recipe was in one of those magazines. Anyway, I just wanted to let you know that I like this recipe that you have presented is a close Vegetarian one to the oneI am missing. It didn’t use the whipped lard though. My favorite tamale is the one I'm eating at the moment! 🤣 Thank you for showing the packaging for the roasted corn...I just checked online and they have it at my grocery store. I’m learning to cook with masa, so thank you for demonstrating this dish! It’s something I can prepare and share with my lacto-ovo vegetarian friends, using coconut oil and mock chicken broth as substitutions. Yum!

I love any kind of tamales. Also, have the Masienda masa in white, yellow, red and blue. It’s worth ordering. Love how you explained each step. I just stopped in to my local Mexican grocery and bought fresh made chicken green chili tamales for our lunch today. After watching your video I was hungry for them! Delicious!
The last time I made tamales was 4 years ago and I burned them after I fell asleep and the water evaporated. It’s devastating after all that hard work making them. They were going to be gorgeous and the pork meat and read chili were delicious. I haven’t made them since but I think I will after seeing this and I will definitely use the quarter trick. ❤
You're gonna call me crazy, but this is how I make my meat tamales, too. I mix the meat with the masa and then use a #10 scooper to portion them. The spring-loaded scoop makes it so easy. Once the meat/masa is on the hoja, I form it into a log as I roll them.

A few months ago I tried making your chicken, chili and cheese tamales. They were yummy, but I put too much cheese and most of it melted out all over the bottom of the pan. I got these done in no time. Just keep in mind, it only works for these non-traditional, meatless tamales. If I were making pork or chicken tamales, I would always spread the masa.

That was wonderful! I think Mom would have got a kick out of that coin trick but she was such a expert at all the tamal processes that she just had it down, Ya know? My younger brother and I would always make sure we were around when the steaming process was done because Mom was so particular about her product, they had to be just a certain size. shape, properly wrapped etc. So we were always hoping for the less visually acceptable tamales because we could do the sampling detail. These look delicious! My favorites are red beef tamales. Our family of 10 adults and 3 grandkids will all be staying in one house for a week this Christmas, and we'll have tamales on Christmas Eve. Sadly, they will just be from Costco, haha, but the rice and beans will be homemade, and we'll enjoy them just the same.

Have shared your recipe for spinach tamales, they are so delicious, used to buy them from a lady that used to come to our job, but unfortunately lost track of her, she was a dear friend, I know that there are lots of recipe, but don’t taste the same, never got the ingredients from her, if you have one would appreciated if you could share with us as your receipts are easy to follow, I would surely be inspired to be a first time tamale maker. I've never had spinach tamales. That sounds interesting. I would have to taste them first to figure out a recipe for them. If I ever see them somewhere, I will definitely give them a try.
not sure if you mentioned, but do you freeze all of the extra tamales? those look amassing and i want to make them. i roasted a 25# box of hot green chiles this last summer and am excited to use some in this!

You can use vegetable shortening or butter. I know some people even use coconut oil. I've just never tried it, but I'm sure it's very possible. At some point in the future, I'll do some research and do a couple of trial runs so that I can share a recipe like that. I just need more time. Thank you for watching. It's nice of you to want to make tamales with your boyfriend's dietary needs in mind.

For traditional pork tamales, I would add a little red chile sauce to the masa, but I wouldn't mix in the pork meat. I think you should still spread the masa, layer your filling, and fold. Mixing everything together works in Chile/Corn tamales because they're non-traditional and meatless. Thanks for watching. And Merry Christmas to you and yours, as well.
I've always wanted to make tamales. I would say they are in my top 3 favorite foods. I prefer tamales with thin masa. When you buy them commercially there is usually more masa than filling. The question I have is, is the masa thinner with your first method of spreading out the masa first, then adding the filling, as opposed to the second method where you add all the ingredients and just put in the filling in one chunck?
You can. In fact, for many years, I didn't even test my masa. But make sure you mix the lard for a really long time so that it's still light and airy. The test just confirms that you did that long enough and your ratio is good.

To answer your question, I think mixing everything together probably only works for non-traditional, meatless tamales, like this one. It would probably be a little off-putting to see pork or chicken mixed throughout the masa. Would I still eat it? Probably. lol

I love any kind of tamales. Also, have the Masienda masa in white, yellow, red and blue. It’s worth ordering. Love how you explained each step. I just stopped in to my local Mexican grocery and bought fresh made chicken green chili tamales for our lunch today. After watching your video I was hungry for them! Delicious!
The last time I made tamales was 4 years ago and I burned them after I fell asleep and the water evaporated. It’s devastating after all that hard work making them. They were going to be gorgeous and the pork meat and read chili were delicious. I haven’t made them since but I think I will after seeing this and I will definitely use the quarter trick. ❤

I like to use creamed corn in the masa. These are my families favorite ❤
You're gonna call me crazy, but this is how I make my meat tamales, too. I mix the meat with the masa and then use a #10 scooper to portion them. The spring-loaded scoop makes it so easy. Once the meat/masa is on the hoja, I form it into a log as I roll them.

A few months ago I tried making your chicken, chili and cheese tamales. They were yummy, but I put too much cheese and most of it melted out all over the bottom of the pan. I’m looking forward to trying these with your ingenious idea of mixing all the fillings together with the masa! My mouth is watering watching you make these! I got these done in no time. Just keep in mind, it only works for these non-traditional, meatless tamales. If I were making pork or chicken tamales, I would always spread the masa.

We all have to start somewhere. Don't be intimidated. Just do it. I promise you, you will learn so much on your very first time. Before you're done, your confidence will shoot up, and you'll be rewarded with some delicious tamales.
That was wonderful! I think Mom would have got a kick out of that coin trick but she was such a expert at all the tamal processes that she just had it down, Ya know? My younger brother and I would always make sure we were around when the steaming process was done because Mom was so particular about her product, they had to be just a certain size. shape, properly wrapped etc. So we were always hoping for the less visually acceptable tamales because we could do the sampling detail. These look delicious! My favorites are red beef tamales. Our family of 10 adults and 3 grandkids will all be staying in one house for a week this Christmas, and we'll have tamales on Christmas Eve. Sadly, they will just be from Costco, haha, but the rice and beans will be homemade, and we'll enjoy them just the same.

I've made red pork Tomales a long time ago my father inlaw Lalo made the best in Tucumcari new Mexico we sure miss him and his wonderful Tomales he has been gone 7yrs

Have shared your recipe for spinach tamales, they are so delicious, used to buy them from a lady that used to come to our job, but unfortunately lost track of her, she was a dear friend, I know that there are lots of recipe, but don’t taste the same, never got the ingredients from her, if you have one would appreciated if you could share with us as your receipts are easy to follow, I would surely be inspired to be a first time tamale maker. I've never had spinach tamales. That sounds interesting. I would have to taste them first to figure out a recipe for them. If I ever see them somewhere, I will definitely give them a try.
not sure if you mentioned, but do you freeze all of the extra tamales? those look amassing and i want to make them. i roasted a 25# box of hot green chiles this last summer and am excited to use some in this!

You can use vegetable shortening or butter. I know some people even use coconut oil. I've just never tried it, but I'm sure it's very possible. At some point in the future, I'll do some research and do a couple of trial runs so that I can share a recipe like that. I just need more time. Thank you for watching. For traditional pork tamales, I would add a little red chile sauce to the masa, but I wouldn't mix in the pork meat. I think you should still spread the masa, layer your filling, and fold. Mixing everything together works in Chile/Corn tamales because they're non-traditional and meatless. Thanks for watching. And Merry Christmas to you and yours, as well.
I've always wanted to make tamales. I would say they are in my top 3 favorite foods. I prefer tamales with thin masa. When you buy them commercially there is usually more masa than filling. The question I have is, is the masa thinner with your first method of spreading out the masa first, then adding the filling, as opposed to the second method where you add all the ingredients and just put in the filling in one chunck?
If you spread your masa the traditional way, you can better control your masa to fillings ratio, so I would go that route if I were you.

Hi, Marcy! Can you still use your masa if it doesn’t float? Just curious.
You can. In fact, for many years, I didn't even test my masa. But make sure you mix the lard for a really long time so that it's still light and airy. The test just confirms that you did that long enough and your ratio is good.

So true! I eat tamales year-round. But I only make them during the holidays.
