      Girl, you and me BOTH! It's actually taken me time to become ok with having a near empty fridge. In my mind it symbolized lack. I'm retraining my thinking to view it as efficiency.

      @@girlinterrupted9792 YES. That is my battle as well. I grew up so poor and having sleep for dinner was a regular occurrence. Now that I have the means I find myself buying things in bulk when I live alone. Hell, I even stock for guests I never have for fear of being embarrassed by not having anything to offer if anyone ever came over!
      The struggle is real AF.

      girl interrupted I would like to report to you some of my progress in this area. But don’t be misled, it has been many years in the making to retrain myself. What I did was I retrained myself to think of the store as my big storage unit and I can run to anytime I need to get something - I do not have to store it in my own house. Another thing I’ve had to re-train myself to do is just buy for a few days at a time - usually on the way home from work. The problem is that I think I eat way more than I actually do, so I think I’m shopping for a few days and in actuality it’s more like a week for some items. I am finally starting to get the hang of it. Also now every couple of days I look in my fridge and I see what is about to go bad and what I need to eat right now because my goal is to never have to waste any food, never have to throw any food out that I didn’t get to. This does make for some strange meals sometimes but I do feel very proud of myself that I’m not throwing a bunch of product out that I didn’t get to. There’s none of that ‘wishful cooking’ thing going on but then you never got to making that dish that you wanted to make. There’s only the reality of what I actually eat. And it’s still a work in progress, but I am spending way less and wasting way less. 🙂

    Have you tried pickling some of the sliced onion? You can heat some vinegar and salt, pour it over the onions, and let it sit in the refrigerator. If you want more crisp onions don't heat the vinegar and salt mixture. It can really add a lot of interest to meals.

      I wonder if you could use the banana pepper juice to pickle the onions. 🤔 I was also wondering if banana pepper juice could be reduced and still taste good. It's funny how budgeting brings out creativity.

      I went to Aldi's for the first time last week! Talk about savings!! Sure, I still had to go to the grocery store to get some items. But for the first time since I started my journey, I had $ left over in my grocery budget!! So I'll go there first from now on before I go to my regular grocery store.

    Hi Stacey- cooking delicious and nutritious food is a big part of my life (I even teach classes to teens at an after school program) and I grew up cooking with a budget similar to yours. I don't have the same restrictions on budget now but I still try to be conscientious of spending so I wanted to throw a couple of ideas out there that you might enjoy or be able to use. first, if you liked the salmon, you may really like fresh mackerel (I get them from Korean or Chinese markets usually); the price per pound is usually about 1/3 to 1/4 that of salmon and it has a similar rich texture and maybe a lighter, slightly lemony flavor. All it needs is a little salt and a tiny bit of oil and a quick sear in your skillet or you can brush a little soy sauce and honey on it and do the same. Second, especially in the winter in Chicago, using frozen greens can be a big money saver. When you buy spinach or kale, it's usually by the bunch, not the weight. And then when you cook it, it really shrinks down. In contrast, you can buy a bag of frozen spinach that has simply been wilted before freezing and you get probably 4x the weight for the same price. It's still great to have some raw veggies in your diet of course, but you can make your budget stretch into more greens this way, and the quality is sometimes better when you live in a cold area in the winter like we do. Even some veg that gets softer when it's been frozen like broccoli can be really amazing sauteed with garlic and red pepper until it's really soft and then mixed with a grain or pasta. i'm going to stop before i get carried away, but wanted to throw some ideas your way- all the best to you!

    Do you eat lentils? One of my favourite recipes for fall is a thick lentil soup with lentils, sweet potatoes, caramelized onions, and a curry spice. Very hearty and warming. Also split peas are an inexpensive protein source which are delicious. I find, for me, lentils and split peas more easily digestible than beans, and because they break down more in cooking, they don’t upset my stomach as much. Thank you for inspiring me to be more conscious of how I shop and cook and eat. Best of luck in your journey!!

      Latisha Smith It is, I make it quite often and you can add any other root vegetables you like, golden beets, parsnips, carrots, butternut squash, basically anything that has a sweet hearty flavour. I just cook my onions in a little oil til they are golden, add chopped garlic and ginger and cook for a minute or two. Then add the veggies including the sweet potato for a few minutes, add the lentils and the amount of stock or water to cover well (check on lentil package or online for proportions of lentils to liquid). Add some curry powder, cumin, cinnamon, salt and pepper and then let it cook in the oven for 2- 3 hours on low heat. Check the fluid level after a half an hour to make sure that it is sufficient, and give it a good stir. It freezes well and tastes even better the next day so that the spices can really intensify. I don’t really follow recipes, just my nose, my taste and my tummy. Enjoy.

    Because you asked... both of those things in your store are sweet potatoes, they are just 2 different varieties of sweet potato, and for "not confusing people in the store" reasons, grocery stores often tend to call one or the other "yams." A real yam is kind of furry/rough, often a little purple inside, and super starchy. If your store has real yams at all, they're probably in the international section with all the other unusual and fuzzy tubers.
    Also, I absolutely adore your channel. You have inspired my budgeting and the clearing of my pantry.

      Also, adding on to that: the "yam" is probably a firmer, drier, and less sweet cultivar of sweet potato, although still sweeter and more moist than actual potatoes. As the skin indicates, it's also a light yellow on the inside, rather than orange. Just in case you are thinking about trying the "yam".
      Also: a different store might switch the names, as the names are treated as sort of interchangeable.

      you're absolutely correct about the difference.... the orange coloured sweet potato or carrot potato as we call it in the Caribbean is used for dessert dishes while the white one is used for savory dishes e.g hash, soups etc. Yams are slimy when peeling and we use the in soups or savory dishes.

    I love your videos!!! I learn so much from them!! My grocery budget is a little higher due to me having a Family daycare in my home; however, I have set a 100.00 budget going forward,(I used to spend 150-175 a month), and I did it for the first time this month!! I spent 93.64! I put the remaining funds in my over-flow account!! THANK YOU SO MUCH!! My over-flow emergency fund is growing again!!!

    Damn! U really went bare bones. I'm about to shop again, n I have apples, cabbage, celery, onions, lemons, carrots,spinach, frozen green beans, frozen Cali mixed vegies and a big turkey breast. The turkey was gifted to me. Also, lentils, canned black beans n garbanzos and broth. I spend $40 0r less per week for me n my grown son. Yes, I make lots of soups n we eat tons of acorn squash, oatmeal, n yams. U r doin a great job!.

    Hope you see this as helpful - your refrigerator is probably working overtime trying to keep so few items cold. In a full fridge all the items help to keep each other cold. I see you don't want to buy items you don't need, but you can fill bottles with water and put them in the refrigerator: it will help save on your energy bills

    I just found your channel and am so happy to have discovered it. I am also on a budget, buy in bulk, and like to prep food and I already have ideas from just one of your videos! I do meal prep but hadn't thought to prep ingredients like the onions and peppers. Coming off the holidays when I had more time to cook at meal time (instead of eating prepped leftovers), I'm excited to try ingredient prep to make weeknight cooking more approachable!

    Stacey, couple of comments might be helpful. Phyllis Stokes roasts and freezes her sweet potatoes as she uses them in smoothies, so that may save you some time (she has a channel on YT). Also Budget Girl (also has a channel) roasts her veggies (carrots, sweet potatoes, onion, squash, brussels sprouts, etc) on a sheet pan- she mixes several veggies with seasoning), and then has those all week. Just a thought. This all looks amazing and I'm impressed with how efficient you are!

    My suggestion would be to learn how to grow the produce you eat on a regular basis. Just a really small container garden of your top 6 produce items.

    My biggest struggle is knowing what to buy that will keep me satisfied & not hungry within a tight budget for groceries and watching your grocery hauls have really helped me! It's just my husband and I, but we buy our own groceries since we work different schedules. This will help me so much on my way to saving money for my own car and getting out of debt :) Thanks!

    LOVE this video! How is it that I never saw any of your videos before? I will have to binge watch...LOL! I don't know if you do this or if anyone has mentioned it, but did you know that you can eat sweet potato leaves? If you cut one up & let a piece sprout in a jar, you can grow it in your house and cook the leaves like greens!

    Again, I thought this chic is crazy spending 50 bucks on food/groceries. But, I get it now too. I see where it works and keeps you healthy. I am still struggling with food, eating out and grocery budgets. I have to get real serious about that budget real soon. Cause it's just 2 of us now.

    FYI: freezers work at maximum efficiency if kept full (maybe stock up on frozen veggies? Or cook more extras to freeze). The fridge portion, however, works better with less food, as the air needs to circulate.

    that kale lemon soup sounds so good. I love when you take us to the grocery store with you. why didn't you get the white beans in a package? too expensive? I'm definitely gonna try this sweet potato stovetop hash because I am getting bored with the roasted sweet potatoes

      I also put leftovers in baked sweet potato. Curry, pasta sauce, baked beans and stews are all great in sweet potato.

    Hi Stacey...I dusted off my slow cooker last week and made your red bean recipe...totally delish...I was a little gassy though, my beans weren't organic but I'm going to try soaking in baking soda next time...thank you 4 the recipe...the black beans are next...God bless and enjoy!!!

    Maintenance here will replace the over head light bulbs. But I have two floor lamps that I would have to replace. I've lived here 10 years, and they are LED lights and I've never had to replace them. I had to replace my drip pans. I just ordered some from Amazon. I was talking to maintenance about that, he said they no longer give out free replacements, but you could buy them off him. I'm like it's cheaper on Amazon. Just make sure you get the right brand, I lucked out and did.

    Stacy, as usual I love your videos. You make some incredibly delicious looking food on a $50 budget! I was just curious to know if you've ever considered light couponing. I ask because I recently saw a video where someone couponed at whole foods. It would maybe free up a few bucks for more salmon. Not taking away from the awesome way that you're doing it. Just an option I guess!☺💗

      I haven't thought about it for a few reasons. 1. my budget is already really conservative and 2 I know I'm not going to keep couponing when I'm debt free. I'm trying really hard to keep my lifestyle as close to what I really plan to do once I'm debt free. So for example, I likely won't eat beans every day when I'm debt free but I will cook my food from scratch. This is a habit I'm building now! Can you imagine what my meals will be when I get to buy whatever ingredients I really want? LOL I hope that helps explain a little more why I don't coupon.       Queen Winchester I can understand Stacey’s perspective a bit. Personally I have anxiety and I feel a lot of pressure on myself on a daily basis to get x,y,z done. Even if I had a tight budget, to me the extra stress of needing to remember/look for/plan my coupons isn’t necessarily worth the couple of bucks I would save.
      From a video perspective though I must admit it would be interesting if one month she did try this just to see how much she might save on her super conservative budget.

      It would only make sense if she uses the coupon on things she already buys on her grocery list.. some coupons may take her off budget..

      This is how I light coupon. I shop at Meijer exclusively. I use their app to look at the weekly sales, create my list, then look on the app for coupons ( they are matched on the app with sales items but you have to search for the digital coupons for items I need that aren’t on sale).
      All my discounts are stored in my mperks and deduct automatically. I get $2 off for every $100 I spend generally, but I frequently get additional discounts and it really knocks money off my bill. So far this year I have saved over $400 on groceries shopping at Meijer.
      Now I could shop at Aldi and save more money, but for me I need to be honest about what kind of shopping goes best with who I am.

    You should still always keep a case of water or a few gallons (find them in Dollar Tree) of water on hand. You never know when the water could shut down due to frozen/broken pipes.

    Great haul as per usual Stacey! Im going to challenge myself to purge my pantry, cabinets and refrigerator and only keep what I absolutely will use. The rest I will give to a family member.I need to go back to doing $50 grocery list as well.I definitely want to try the Sweet Potato hash.

    The difference between sweet potatoes and yams are that sweet potatoes are flavorable and moist. Yams are strachy and dry. Hope I answered your Question. I loved your grocery Haul!!!!!!!!

    Only 2 minutes in, but if you let the rice soak and then change the water 10x whenever you think about it, that helps a ton. I use jasmine.

    Hi Stacey! It’s the lectins in the brown rice. Try white rice or soak the brown rice in warm water with a tablespoon or so of yogurt overnight. The lactic acid will breakdown what is needed. Hope that helps! I soak white rice and oats (separately lol) too with warm water and yogurt and it tastes amazing and makes them more digestible.

    If you're going to be cooking a lot of rice I definitely recommend getting a rice cooker. $20-$30 and soooooo worth it!
