May I ask if you use a glue between the ganache and fondant, eg brushing the ganache with water or sugar syrup? (Always seems such a shame to have huge holes in a lovely cake!) Hi Sue, Thank you so much. I'm so glad you enjoy them. If I'm finding that my fondant isn't sticking to my ganache I usually mix a little water with some icing sugar to create a glue and brush this over the cake to help the fondant stick. I find just by adding a little icing sugar to the water it makes it a little stickier than just water on its own. x x
How tall are your cakes? They look amazing!! How do you get them to bake evenly? I’ve been trying but the outer layer burns before the center cooks even when I use a core
Your oven is absolutely too hot. Use a lower temperature and bake for a longer period. Your oven racks might also need adjusting. The cakes should be in the center of the oven.
Thanks a million for this tutorial! You saved me. I had a few situations where the cakes collapsed and I could not understand why. Very embarrassing moment. Since I watched your tutorial and followed your advice, my cakes have been ok. I also purchased some sturdy plastic stacking cake plates for peace of mind. Thanks again!

The freezer does not cause condensation or sweating, it is the change in temperature that does when the cake is moved from the freezer to room temp. To prevent sweating and condensation from occurring, move your cake to the fridge from the freezer for about an hour before serving to let it adjust to room temperature! Wrapping the fondant cake in a box also helps prevent this!
Thank you for the video was very helpful. I just recall you saying the cakes should have a board underneath going ontop of the dowel I'm referring to the second and third tier.. But it doesn't look like you have boards under them.. Perhaps it is the thin one? Can someone clarify for me please.

Hi Amy, my advice would be to use a nice strong dowel. Fruit cakes are actually quite sturdy so even though they are heavy they are usually better at keeping their shape and have less movement than a softer sponge cake. I have stacked fruit cakes on top of sponge cakes in the past, so as long as you have a good structure inside the cake to take the weight and use a dowel that when pushed with a lot of weight won't bend it should be fine. I love the wider, thick dowels polydowles I use in the video for larger, heavier cakes.

I find that a coarse emery board is great for evening up the ends of the dowel. As I often do my nails, it's a very natural process for me. 😁

Cake straps it’s a fabric strap that wraps around your pan and make it cool evenly

When you put the cakes in the fridge to firm up and then put the fondant , doesn’t the fondant starts to melt? How do you manage condensation ?
