that little juicer thingy is so cute! this salad looks so good. I was just diagnosed T2d so Im just learning whats ok to eat. I had a mini stroke in Nov, of last year its been a roller coaster ride thats for sure. i want to ear well, but still eat healthy. ❤️

I make this in summer and potlucks. especially with chips. I also grill a good size chicken breast diced and add during my lunch hour. Great recipe. I never added Olive oil, I will try.
A top favorite salad of mine!!😋😋😋 Goes well as a side with most all grilled meats, quinoa, or rice. Me I like to mix up a serving of it all and make my own version of chipotle bowl much much more flavorful 😊

I made a slightly different dressing: juice of 1 lime, 2 tsp rice vinegar, 2 tsp canola oil, 2 tsp cumin, 1 tsp coriander, 2 tsp sugar, 1/2 tsp salt, 2 tbsp Tabasco, 1 clove minced garlic. Really delicious. Of course you can adjust the amount of Tabasco.
I have a question...can I make this ahead of time and store in my fridge/serve cold? (I would wait to put the avocados in until I’m serving, of course) I’m so excited to give this a try!

If you charr the corn in a dry pan first as well as soak the red onion in cold water before adding, it's even better. Great recipe
Never heard of soaking onions in cold water before. What does that do for them?

When picking make sure you can firmly mold to your hand when squeezed. No squish=not ripe at all. really squishy= too ripe. You’ll know 😉

Yes, as long as the avocados aren't in there it should stay fresh overnight.
