Rustic, simple and bursting with flavour, this is eaten as a main dish here in Greece, but works equally well as an accompaniment, or part of a summer buffet. Briam is best savoured at room temperature, so is ideal as a cook-ahead dish. It's a vegetarian/vegan stunner that even the hardiest carnivore's will love!
