  • This weeks recipe is Keto Blueberry Crumble bars. This was a recipe inspired by the end of spring and the plentiful amount of fresh berries available as summer comes to an end. These bars are actually great for breakfast or as a snack. Simple to make and delicious.

If parchment paper is crumpled into a ball, then smoothed out,it is more malleable, takes the form of the container more easily.
Recommend your site to my keto friends. Never disappointed !

I use xanthan gum all the time. Here is a tip for anybody using it that has problems with lumps like I had. You can do as Sarah did and sprinkle it lightly but I had found I had to whisk or stir at the same time, it lumped up for me if I didn't whisk or you can dissolve 1/4 of a teaspoon in some cool water about a couple of tablespoons or about 1/4 of a cup or less the same way you would cornstarch. And it gels up and then you can dump that gel into your mixture of berries or whatever you're working with

    • @cassieoz1702

If you mix the xanthan well into the sweetener, you can dump them in both at the same time without any lumps

I made your bars but I used coconut flour instead of almond flour. My husband can't have almonds. I adjusted the coconut flour to 1/4c per cup of almond flour as coconut flour is drier. They came out so good. Thank you for your recipes keep sharing please!

They look delicious. I'm not doing keto but I am trying to reduce my carb intake; so is my husband who was diagnosed type 2 diabetic and reversed it by reducing carb intake, as well as overall volume of food which resulted in significant weight loss and normalized his A1C. He didn't want to go on meds if he could avoid them. The doctor says he is no longer diabetic.

No. 6 tablespoonfuls is not one stick of butter. 8 tablespoonfuls = 1 stick of butter.
So how much butter do we really use?
    6 T or 8 T?
Written recipe says 6 T as well.
    Really enjoy your video presentations.

Great. Thanks for the quick response! Organic Blueberries, raspberries, and blackberries have been a great price lately.
Strawberries too, but the fail fast to mush in the heat. So that could be a great alternative.
Would you cut up the strawberries in pieces blueberry size to sub that fruit, do you think?

Hey Sara. I thought of them metal clamps to clamp parchment to top of sides of your pan to get it out of the way while you work and they are oven safe. they are awesome! They sell them at dollar store for 1 dollar for 3 of them. They are same as the fridge magnet clamps that you use to hold notes or pictures on fridge. Except these are metal and oven safe. In the same area where salt and pepper shakers are, whisks, oven burner covers and them whisks. they are really handy for clamping bags of chips, flour ect together too. Not bad at all. These look great and your a good cook! CJ Smile!!! LOL

This looks amazing and I'm gonna give it a try. I see that you were struggling a little bit with the parchment paper. If you get some binder clips to put on the Pan holding down the parchment paper while you are assembling the dish I believe it will aid you in this process. It's a tip I learned from the Internet. I hope this helps.

Do you adjust oven temp if you are using glass bakeware instead of metal for these bars?

    • @cjsketokitchen
      @cjsketokitchen  5 ปีที่แล้ว +1

      Hi Patti👋🏼
I never adjust my oven temperature for my bakeware… I know a lot of cooks and bakers do, but I just set my timer for the lowest possible time, and keep checking on it

My sister gave me vintage lily earrings, ever since then, I try to search for tops to wear them with!.
The bars hold up well, and should be refrigerated. I usually pop my in the microwave for a few seconds to take the chill out before eating. Have a terrific 3-day weekend 🥰
