They were amazing! Much better than the canned ones, which are the only ones I’d ever been able to get my hands on as I live in the US hours away from any Asian markets.

Our neighbor in Maunawili Tata Johnny made us pork with fresh Bamboo never want to touch that canned stuff again
It depends on the variety,there are some bamboo shoots which can be eaten raw. Those are a little bit sweet
