The house I bought had a little grove of bamboo in the back. They’re the runner type and in spring the shoots just randomly popped up in my yard and I thought “why not?” Boiled them (they’re toxic if eaten raw) and had my first ever fresh bamboo. They were amazing! Much better than the canned ones, which are the only ones I’d ever been able to get my hands on as I live in the US hours away from any Asian markets.

Our neighbor in Maunawili Tata Johnny made us pork with fresh Bamboo never want to touch that canned stuff again
It depends on the variety,there are some bamboo shoots which can be eaten raw. Those are a little bit sweet
