The charm of preserved pork and sausage is worth a year’s hard work and a long journey home. It is this unique flavor that I miss the most every year. The pig fed by our own grain, which has firm lean meat and delicate fat, is made into meat sausage and tofu sausage, as well as other preserved food: pork rib sausage, dried pork, preserved pork liver with salted egg yolk, and so on. They are all tasty. How tasty are they? They are eaten up as soon as they get dry. There are only four pork tripe sausages left in the house. I guess we’ll have to make them once again before the year is out, or we won’t have any sausage or preserved pork to eat in our house for the coming year.

As a chef, I get so much inspiration from this channel. Seeing un-adulterated regional cooking from anywhere is tight. Mugwort smoked pork.... amazing. The yolk stuffed liver just hanging out at room temp was wild too.
They live up in the mountains so it's actually pretty cold there, especially this time of the year.
@@DoctorMcHerp and they also have clean environment with households that still use firewood. It's help prevent fly and other insect to mess the food too.
The countryside scene is so peaceful
They add a lot of salt, spicies and hard liquor so its fine to dry it like this; plus its a winter season so its colder then usual.
Their room temperature in winter is low, though. Less than 15 degrees Celsius. Too cold for houseflies and maggots. The meat's also smoked which prevents bugs.
As an American with poor health I can only dream of your life. The joys, the hard work, good food harvested and prepared yourself, the places you get to go and people you get to meet, a caring supportive community. You are truly a blessed woman. 我真的觉得中国的大叔大妈爷爷奶奶都非常的亲切。小时候在中国的时候，我们家公寓有一个大妈很喜欢我妈还有我（可能是因为韩国人吧哈哈）然后她自己在家里做很多腊肠之后还特地到我家送给我们吃。第一次吃到腊肠，不仅是好吃，而且让我心里也是暖暖的，很感动。想回去中国，吃腊肠，再次回味那时候的感觉。
