That's called the heartwood. Some species have a distinct difference in color between the inner (heart) wood and the outer (sap) wood. Hickory is one of them. When I restore an axe, I always prefer handles made from hickory heartwood. They're much prettier afterward.
My grandad used to make different pieces from wood, such as plates, bowls, cups/chalices, Welsh love spoons etc so watching videos like this reminds me of him, he passed away in 2019 at the age of 94 and I have a few of his pieces as keepsakes
I love how the wood looks polished just after making a cut without you even putting shellac on it. I don't know if that's the species of wood or the precision of your cuts, I'd say it's the ladder. Beautiful work. I appreciate you.

This could be made from green or seasoned wood. The yew in this was dead for quite some time but stored outside and the laburnum burl was fully seasoned. If it had been made from green wood there would be a some warping to the top of the chalice but other than that I’d expect no other movement. Thanks for watching 😊👍🏻
Thank you 😊 Laburnum and yew are both poisonous ( toxic ) woods. ☠️ 😊 But they aren’t too bad too work with if you don’t eat it or breath too much dust.

Burnish then Shellac (I make my own). Cut back shellac with fine wire wool then danish oil. 😉👍🏻
