So my question is: would that be possible to see communication other then rip multicast (for example: telnet, icmp, ftp, tftp) between SiteA and SiteB ? When using whireshark to see the traffic would I be able to read it in clear text if protocols like telnet are used?

Mostly it will be used in WAN service provider network. As you are looking for an example, consider you have two different branch offices operating in different geographical locations, this links will be used to connect both of them.
Good job. Everything worked beautifully. Looking at the MPLS Layer 2 & Layer 3 headers in Wireshark, there doesn't seem to be a way to determine which one is layer 3 and which one is layer 2 unless you go back to the command line...

Label 200 is shown in packet capture towards the end but not shown in LFIB of SiteA-PE1 router. What's the reason for that, pls?
