Rolled strawberry cake with mascarpone cream

- Last call for the strawberry season in Israel! We manage to find them less and less often at the supermarket already, so that's the occasion to prepare a last strawberry cake! Here I show you how to make an easy cake: a rolled strawberry cake with some mascarpone cream. I really like it, it's fresh and creamy and not too sweet. Of course you'll be able to make it with other fruits after the strawberry season is over! So let's move to the kitchen!
I didn't calculate but this recipe makes a large cake where you can cut lots of slices.
Ingredients:
Sponge cake:
4 eggs
100g sugar
100g flour
a teaspoon of vanilla
Sugar syrup
50g sugar
50g water
a bit of vanilla
Cream:
300g heavy cream
150g mascarpone
20g icing sugar
about 400g strawberries
If you want to pipe some cream on top, you'll have to make x1.5 the quantity of cream that's indicated above (450g de crème liquide, 225g de mascarpone et 30g de sucre glace)
Recipe:
1. Prepare the sugar syrup: Pour all the ingredients in a pot and bring to a boil. Leave on the side to cool down
2. Prepare the cake: in the mixer, mix the eggs with the vanilla and the sugar until it triples in size. Then sift the flour above and mix slowly
3. Pour on a baking sheet and spread evenly. Bake 8 min at 200 degrees.
4. Once it's baked, flip it over a wet towel when it's still hot and roll the cake on itself.
5. Once it has cooled down, we prepare the cream. Cut the strawberries in cubes. Mix the cream with the mascarpone and the sugar until it gets fluffy and firm.
6. Unroll the cake and remove the paper. Pour some syrup everywhere. Spread a thin layer of cream. Add strawberries. Add more cream. Then roll until the very end.
7. Cut the edged and place i the fridge so that it firms up.
