    Minimal ingredient dinners would be super helpful! I can figure out a decent amount of breakfast, lunch and snacks ( i totally have a snacking problem) but dinners are where I struggle. I tend to eat the same boring thing everyday!

    Here is a good video idea I think: make vegan versions of popular chips ex. Lays sour cream and onion, Doritos nacho cheese, sun chips

    And you could make the popcorn balls into Cookies 'n' Cream Popcorn Balls using white chocolate and cookie chunks instead of dark chocolate and peanuts!

    another thing: peanut butter toast! I add coconut, chia seeds, honey, banana, dates, fresh fruit, whatever!

    Caitlin, I am really loving your channel. I am trying vegan again after a few years but this time I am doing it right. ie: researching and making sustainable meals.     Had to comment again because wow the little quick pizzas seem so yummy! The date snickers is genius when you are craving a sweet, but don't have time to hardcore bake. I will def be trying both!

    The Date snickers taste really good. I used fresh ground cashew butter which was alot thicker than what you used and they turned out perfect

    I recently turned vegan (from vegetarian) and was struggling with how to get started as well as meal/snack ideas and prep - but thanks to you my transition has been so much smoother and I've eliminated anything animal related in my diet.     If you guys don't have the money, or you don't wanna go to the store you can use hummus and mix it with some water for some "cheese" on a pizza. Toppings make it super yum.

    I sprinkle nutritional yeast on the cheese 😁 it takes away the coconut flavour vegan cheese has sometimes and it makes it more creamy, love it ❤️

    If you want another option for the caramel, I recommend blending some dates with plant milk, it's absolutely delicious

    The 'snickers' looks heavenly. Will give it a go. I love leftover baked sweet potato with a dollop of coconut yogurt and a little raspberry jam or just berries on top for my afternoon tea. Hits the spot and is super filling :)

    Sometimes the minimal ingredients recipes although simple can be so flavorful. These were great fun ideas. I can hardly wait for fall and all the Autumn and Halloween inspired recipes. :)

    Just tried the avocado one with some sea salt flavored pita chips I got at Aldi's. Works like a charm! Messy, though.

    I really like your videos Caitlin! So pro and beautiful and inspiring, too. One thig I’d like you to pay attention to though is when you hit the avocado pit with a knife, Never Ever keep it on your palm but on the table. There’s a huge risk of injuring yourself this way. Be safe girl, I really want to see this stuff also in the future!

    I drive a truck for 10-14 hours a day so naturally I'm developing the gut with a flat butt dad bod at the age of 26 lol I need one handed healthy snacks that don't need to be microwaved and won't go bad in a cooler. Looking forward to try some of these 😁

    So happy about the vegan pita pizza recipe, I’m so intimidated to make my first pizza and for it to be vegan since I’m transitioning..the pita pizza is much more doable
