How do we stop it from turning back on every time we start the car though?

Once you turn it off, it should remain off. If you need help, please call our Delivery Specialist, Natalia, at (864) 582-1200. Thank you!

It doesn't remain off and never has, the way people are expecting when they say they want to turn something off permanently. Many preferences require a driver profile to be saved first, which requires setting up facial recognition. For people that don't want to use that feature are forced to set it up if one wants their preferences saved. Saved settings are only applied if the car recognizes the driver profile. There are a lot of features that are super annoying, and are reset every time you turn off the vehicle, regardless of the saved preference. If you do turn off features you get even more annoying warning lights to say the feature is off because that's the only feedback unless you go looking for them to check their state. Nobody sane wants to be reminded they turned something off when they intentionally wanted to turn I'd off, regardless of the problem that a different person driving the car might want them on.
Even if users opt out of data collection, not use the app, and not setup a driver profile you're stuck entering your preferences every time you start the vehicle.
If you really want to permanently turn off driver monitoring put tape over the cameras. The car will turn the driver monitoring feature off when it detects malfunction.

@@jamiecouturewhere is the camera ? Is it the little red light that turns on in the little screen above the infotainment ? I fucking hate the driver monitoring shit

@@tylerwhitlatch5245 It's the panel above the infotainment system. The camera will be solid red when activated. You can put a piece of cloth draped over it to avoid adhesive tape gumming it up. You will lose user recognition features but at least won't falsely bother you to "keep your eyes" on the road.
When it's disabled the dashboard will emit an orange light.

When I got my 2020 Outback I just sat in my driveway for 20 minutes and played with the settings.
It's interesting to know what all you can do
