Fish N' Chips: The Yankee Way

  • No one makes better fried fish than the Limeys, and as a Yankee/Limey combo myself, I thought it only fitting to give Fish N' Chips a shot. Like, flakey, and buttery, Fish N' Chips are a great comfort food, especially when paired with some tangy, creamy homemade tartar sauce.
    Ingredients:
    Tartar Sauce:
    1 cup real Mayonnaise
    1 cup finely chopped dill pickles
    1 Tbsp dill
    1 tsp lemon juice
    1 tsp sugar
    1/4 tsp freshly ground black pepper
    Fish:
    1.5lb white fish fillets (like snapper, whiting, cod, tilapia)
    115 g plain/all purpose flour
    50 g potato/corn starch (with some extra for dredging)
    1¼ tsp baking powder
    ¼ tsp salt
    250 ml cold light beer
    4 - 5 cups peanut oil (or vegetable, canola or cottonseed oil)
