Wow, these are dangerously delicious... Taking a quick break from my healthy eating until these are all gone 😂. Very easy to make, too. They came together exactly as shown in the video, not hard at all. They were great once I made them but for some reason they were even more delicious after I'd let them chill in the fridge for about an hour or so. All the flavors came together even more perfectly then. Family loves them and so do I. These literally lasted a few hours and they were gone. Just made a second batch and we can't wait to dig in. Absolutely love these. Thanks for sharing!!

Saw another video where they used a piece of drinking straw at the end of piping bag to fill the pastry. Thought it looked like a good hack. And your way to make the custard is a lot easier than the other videos. Just add everything to pot cold and heat up so simple. Thanks for the vid.

Laura, I began making éclairs when I was ten years old from a packaged mix. Basically, it was the same as “scratch” in that everything was in the package except the very fresh ingredients like cream and eggs. Still, one had to make the pâte à choux, custard, and ganache from the mix exactly as you demonstrate. If a ten-year-old can do that, ANYONE can do it. Loved the skewer trick for steam escape and, as usual, LOVED your demonstration.
it's funny, in france we make the holes in the bottom to fill the eclairs and we use a glaze call fondant (not the one for the cake) to put on the top. The custardis also made diferently but i'm sure your eclairs taste great!

Assassins Angel yes you can ...I use to make these all the time and used a wooden spoon...but believe me your arm will start to hurt after blending each egg ...well worth it !!
Assassins Angel Definitely, just add a little more power! ;) I do pretty much everything by hand, meringues, cream, cake batters, cookie batters, etc. , all you need is a good whisk and a good spatula (both silicone and wood) :D

They look delicious. We make them with cream here in the UK, as opposed to custard but the custard looks lovely, too.

I have a question is there a difference by melting the chocolate with milk and melting it with butter? does the chocolate taste both the same?
It makes a type of icing/frosting when you melt it with milk and it just melts when melted with butter
