Petits Filets w/ Tomato Confit, Potato Latkes and Chimichurri Sauce
Tomato Confit
- Grape or Cherry Tomatoes
- Garlic Cloves
- Olive Oil
- Salt and Pepper
- Balsamic Vinegar
1. Split tomatoes in half
2. Crush garlic cloves
3. Wrap tomatoes and garlic in aluminum foil; roast at 350° for 30 min
4. Remove, season with salt and pepper, toss with balsamic
Chimichurri Sauce
- Stemmed / Chopped Parsley
- Olive Oil
- Red Wine Vinegar
- Dry oregano
- Cumin
- Sea Salt
- Minced garlic
1. Place all ingredients in food processor and pulse until smooth
2. Transfer to bowl; add more olive oil to get desired consistency
Latkes
- Russet potatoes; peeled and shredded
- Minced onions
- Lemon juice
- Eggs, beaten
- Flour
- Chives
- Salt, Pepper, Garlic Powder
1. Combine shredded potatoes, minced onions, and lemon juice; allow to
sit for 20 min.
2. Wring excess liquid from mixture
3. Add beaten eggs, flour, salt, pepper, garlic powder, and chives
4. Heat frying oil in skillet
5. Ladle scoops of potato mixture into hot oil and allow to fry for a few
mins, until crispy on edges
6. Flip and fry other side until golden brown
7. Remove and drain on paper towel; hold
Filets
- Petit filet
- Salt and pepper
1. Sprinkle filets with salt and pepper
2. Place filets on griddle and sear to desired temp (med rare)

@@charlieharley7387 I've tried so many times to give them a shot but Luis J Gomez is the worst. I've laughed more during funerals than at anything he has ever said. It's funny they mentioned the Nick Cannon special during this episode because that's the funniest thing I've seen from Big Jay. He seems like the funniest one, but the fingerless gloves always made me cringe. I'd rank pretty much every comedy pod over theirs, but my number 1 is Tuesdays with Stories.
That's fair but everyone hates luis at first. He'll grow on you. I still listen but Tuesdays with stories peaked years ago and has fallen far from grace.
Jay nailed the African accent. Soder Voice Academy really paid off

Yeah sometimes he’s just the right guy. I watched a few eric andre zoom podcasts a couple years ago and they were all trash apart from Bert’s. It really depends on who he’s talking to. He can be the best and the worst interviewer.

There's a learning curve, start with clips and steep your toes into current eps I will tell you right now you'll hate luis at first and then he'll grow on you (like a parasite/fungus) you'll think Dave is meh but then REALLY appreciate him in several moments, Big J is Big J is Big J - Crowdwork God who is deeply insecure but willing to put it out there, anyway.

Stanhope also had Gillis come stay with him during the pandemic. Stanhope also did Skankfest with his face painted in Houston. I love Skanks, Stanhope, Gillis, Impractical Jokers and Bert. All are great comedy that brings me joy. I am a fan.
