We do not get nearly as much out of livestock as we put into them. We can grow 18 times the amount of food per acre of land if it's entirely crops for humans, vs. if it were crops for animals, animal space, the facilities to process their manure/waste, etc. And about 10 times the protein if it's just crops for humans, too. We actually grow enough crops to feed 10 billion people, but unfortunately they are wasted on animals -- just Google it.

Plants are living things and react to their environment. They are more intelligent than you think. May not necessarily be pain in the way we understand, but plants do react to their environment; we all know this. Plant foods have a defense mechanism to protect themselves from getting eaten; it’s called anti nutrients. I promise you your depression will cease once you eat meat. I was vegan too and mentally it destroyed me. Once I started eating meat I felt completely healed.
1. Plants are not sentient/self-aware because they have no brain or any processing unit to perceive things. You need to be able to perceive things to be able to perceive pain. 2. Pain is an advantageous adaptation in animals & anything with a brain. We feel pain so we can avoid the thing that is giving us pain and so we can be gentle with broken bones & stuff like that. A plant has no reason to feel pain because it would not be able to do anything about the pain it’s feels. Anything a plant does is going to be completely different from an animal because a plant has different parts.

Plants are a completely different life form with their own form of survival instincts and I think there's a chance they have their own form of life preserving sensations that if we could translate into our language might be the plant-equivalent for "pain." We'll never know and there's no reason to claim to know. But we very much can relate to and empathize with the pain that animals suffer, and at least for me that is at least one of the reasons I'm vegan.
How do you prove that a being is conscious at all? Consciousness is a subjective experience. There's no way to tell the difference between a conscious being and a being that appears to be conscious, unless you yourself are the being. Of course, we all make the assumption that beings that appear sentient are in fact sentient, based on evidence like similarity in brain structure, behaviour, etc. But at the end of the day in order to believe this we all need to make fundamental assumptions about the universe (ie, that it exists and is measurable). It's possible that it's all some wacky simulation and you're the only conscious being in it, with every other being just programmed to appear sentient but actually being totally unable to experience anything subjectively.
