非常好,因为这是第一次听说做春饼使用高筋面粉的,人们都是普遍使用低筋面粉做春饼,不要高筋面粉。还要特别防止起劲,所以不能加盐,也不能揉面,只能用反复叠压的方法和面,每次都要专门去找来低筋面粉。是用平底锅烙出来的。
这个视频使用的是相反的技巧,所以觉得很好,很有另外的体验价值。
完全按照海娟老师的方法做了,开始面团是很黏,难揉,手上沾点面粉就好了。做一遍才知道,确实不用怎么醒面,因为做的过程时间足够长,一边做一边面就醒好了。海娟老师的方法很实用👍🏻

應該沒有錯,高筋麵粉吃水量高,一般我拿來做麵包500公克可以放到百分之70的水分,她的配方也不過是放了百分之80很合理,台灣的潤餅皮是麵糊含水份還更多,只是操作方法不一樣
如果500克面粉加400克水,揉成的面团是900克,每个剂子大约20克,可以分成45个剂子。而实际上,我数了一下,她切了最多大约34个剂子,也就是说面团大约680克,可能每个剂子稍大于20克,因此面团最多不会超过750克。况且她说了用的是中筋面粉,吃水量不会很高。所以,我也认为Rebecca Deng说的对,的确她口误了。
